Zuke 'n Asparagus Noods & Raw Vegan Apple Crumble

Happy Hump Day.  How has this week been for you so far?  I am flying solo today, Scott's back on the road, but just for a day trip and then no more trips for at least 2 weeks so that's great!

I really, sincerely wanna thank everyone for your supportive and reassuring comments from yesterday's post about the but how do you get your protein comments I've been having.  Your kind words both in the comments section and in private emails mean the world to me and I feel so loved and cared about from you all.   I want to sincerely thank you!  Muah!!!

Ok let's talk about food!!! 

I know I've been hypin' up the spiralized food like a used car salesman is hawkin' hot cars, but really, I swear I feel like I am eating pasta when I eat my spiralized zuke noodles so I am just happy as a pig in shizzle about it.  Maybe I've been gluten free for too long or somethin', but I Am A Believer, praise the Paderno.  Check out the zuke noods tossed with asparagus, carrots, and cukes.  



I tossed it up a Thai-inspired Peanut Sauce.  This recipe was approximately 1/4 c P.B., juice of half an orange, 2 Tbsp Raw ACV, 1 Tbsp Sesame Oil, 2 Tbsp Agave, 2 Tbsp Maple Syrup, 1 tsp ground ginger, Couple cracks 'o Black Peppah all in the Vita-Mix

And in a bowl for drinking for later....it's really quite supurb if I do pat myself on the back, and you may just wanna drink it. 

And it's all pooled up by the zuke noods.  Slurp, slurp.


I'm switchin' it up to have you feast your eyes on a raw vegan dessert I made.   I'm callin' it Raw Vegan Cinnamon Apple Crumble.  The recipe just kinda came to me as I was out for a run.  In retrospect, there are other spices like nutmeg or cardamom, or maple syrup in place of agave, that would work really well too.

But here goes what I did...

Into the VitaGrinder went 1/2 c dry oats, ground for 10 seconds.  Then added 1/3 c almond flour (or just 1/3 c almonds and grind) and ground for 10 more seconds to blend.

Then, added 3 large medjools and a drizzle of agave and in 30 seconds I had my crust.


I smooshed about 2/3rd's of the crust mixture as best I could into the bottom of a small square Gladware container, just to give ya portion perspective.  This is not a big dessert by any means.

Peeled & sliced one apple and laid it on top the crust

Sprinkled cinnamon and a drizzle of agave over the top

Then took the remaining 1/3rd of the crust mixture that was still hangin' out in the Vita canister and added another 1/4 c oats, 'nuther drizzle of agave, dash more of cinnamon, & 2 Tbsp brown sugar (omit if you wanna be totally raw and just roll with the agave action).  Now you've got your Sweet Crumbly Topping.

Another squeeze o' the agave bottle optional.  Can anything really ever be too sweet?  I think not.  Squeeze away.



And I had a solid 1/2 to 3/4 c of leftover crumble topping which I put into a bowl.  This will be great over fruit, nanna softserve, or just to munch on.

Things got crunk up in herre when I put Ms. Crumble on top of the Nanna Softserve from the day before.  And added a very un-vegan slab 'o Cool Whip for Scott.

I'm glad to hear you're feeling better after the drama yesterday!! Do what you like to do, don't listen to the haters - do what makes you feel best :)

That dessert looks amazing! I love the crumbly toppings on coffee cakes/crumb cakes so I'd be content just that but the apples just make it even better!

Loooovely crumble. Now that autumn is here, I love baking with pumpkin and apples - mostly pies, sweetbreads, and muffins.

Oh yum, I'm so excited for Fall and apples! (Not that I stopped eating them in the summer...)

I really like the chocolate Jay Robb. (And the simple ingredients)
But I don't use it very often because it's a pain you can only get it online.

I think at one point, my facebook status said, "does anyone want to adopt me so I can be the black sheep of your family?" Hang in there. It will get easier...either through your own coming to terms with their lack of support, or them growing to understand and respect your choices.

Crumble looks delish :D Love the crunchy topping! Facourite fall food...anything with pumpkin or squash!

I've discovered that there is lots of love going around the blogger world. Even though I don't know most of the people that write, read and comment, I feel like they're really great friends. :)

You are the most creative person I know when it comes to creating desserts and meals. That apple crumble looks amazing!! The zuke noodles look delicious, too. I swear I could eat "pasta" everyday.

ok, my mouth was watering at the "pasta" dish with peanut sauce and then you had to go and whip up that apple thang. holy YUM! i need to go get my vitamix back from my mom pronto and give this a whirl. i am sure my vegan dudes would love me for it! i am going to have to test out a bunch of your stuff on them, i am always trying to find new fun vegan eats to feed them (all of my boyf's roomies are vegan, you probably didn't know that since i havent blogged about them in awhile!)

Oh my! The apple crumble looks FAB!!! I must give that a try - soon. And you've convinced me to finally get a spiralizer. My next Amazon order is going to include the purchase.
And don't worry about being the black sheep. There's enough of us now, so that we aren't in the minority anymore! ha ha. I've marched to the beat of my own drummer for so long that being a black sheep is actually a compliment. So, congtrats to you for being THE ONE in your family!!!!

p.s. is there ever a day where you don't use your vita? I don't think so and I love you ever so much for that :)

p.s. just catching up on your other posts and I'm so sorry to hear about your mom. I can't even imagine how upsetting and disheartening to not feel as though you have the support from your mother but try to take her comments with a grain of salt. You are a grown woman and know what's best for yourself. Focus on you girl!

Thanks to everyone who has just wished me well and sent positive thoughts with the lack of support from my madre. Yeah, I'm only 33...it's time to be like Whatever and just do my thing, take care o biznass round here and fu*k the rest of the b.s. Pardon my french :) Well, not really. I do have a truck driver's potty mouth if you weren't able to gather that from the bloggie :)

And to my crumble lovers, yeah it was pretty off the chain. After I got those pics up, then the softserve started melting and it got like apple pie ala dairy-free mode. Quite delish. PBJ I won't tell your gramma, and yeah i use my VitaLord daily...I dont know how I lived before it.

OMG that crumble looks amazing! THANK YOU for being such an awesome raw food inspiration - I definitely need to experiment more, this is such a fab idea. I'm hungry just looking at it.

Saw that you posted an apple crumble recipe from another blog and I had to go to your blog to check it out. YUMMY! Looks like a true crumble.

Triangle is my favorite pose, I'm still working on revolved triangle, I tend to topple over, not quite that twisty, yet. ;)

Your apple crumble looks awesome... I made a raw apple pie from ani phyo's book that was awesome... you might like it :)
