From my last post, I'm glad you enjoyed the Sundried Tomatoes
And Broccoli & Cauliflower Salad recipes. My homemade slaw dressing is easy to make, so tasty, and alot healthier than the store-bought stuff! Heather even got in on this action. Way to go HEABs!
But for today I have a couple easy, chocolaty recipes for you. Because I don't know about you, but for me Halloween Day is just crying out for Chocolate Love. So here you go....
First, I've been seeing hot cocoa cropping up everywhere. Mama Alison got inspired from reading some ED & BV, the Pure Twins kept their version raw & delish, but I decided to make the quick-n-easy version. This is all I did:
Averie's Vegan Guiltless & Fast Hot Cocoa
In a mug combine:
1 Tbsp Cocoa Powder (Or 2 Tbsp if you're like me & want it extra chocolaty)
5-6 oz water (or nut/seed milk of your choice; I didn't have any open and didn't feel like cracking a container just for this and water worked perfectly fine)
Stevia or Agave to Taste (I used both agave and liquid cocoa bean stevia but I like things really sweet)
Stir well or Whisk
Microwave for 60 seconds and Voila...
Why do I say guiltless? Because at probably under 50 calories I feel like I am really indulging in a decadent, warm, soothing treat without any regret. Whatsoever. In fact, I loved it so much I made a second cup! And I have been using the Hershey's Dark cocoa powder and yeah, it's really good. Thanks Katie for telling me I needed to get on that, stat.
Moving onto my next chocolate creation....
Averie's Raw Vegan Chocolate Chia Seed Pudding
2 Tbsp Chia Seeds
1/2 c Nut or Seed Milk (I use TJ's lowfat vanilla)
2 Tbsp Agave and/or Stevia to taste (I also used a few drops of my NuNaturals Cocoa Bean Extract Liquid Stevia)
1 Tbsp Cocoa Powder
1/2 Tsp Vanilla Extract
Combine all the ingredients
Stir all the ingredients together and leave on countertop for 20 minutes. Use a whisk if necessary & it may seem like all that chocolate will never dissolve, but it will. And the results will be so worth it.
Come back to it 20 minutes later and stir again. Either devour now...
...Or pop in the fridge for a few hours. Know that the pudding will continue to thicken for the next 4-6 hours. What I like to do is put it in the freezer after it's thickened in the fridge to create an almost ice-creamy like treat with frozen chocolate chia pudding.
This is after 4 hours in the fridge. Whatever you do with it, it'll be chocolaty & yummy, plus you're getting all the great health benefits of chia seeds like extra Omega 3's, yay for the little chia seeds!
And by the next morning it had thickened to near fudge-like proportions...
What I love about this pudding is that it's a snap to make but the taste is really decadent, rich, fudgey, just luscious. And as chocolate desserts go, healthy, too.

Today is the last day of VeganMofo. I have succeeded by posting vegan, and largely raw vegan, foods & recipes every single day during the month of October. It's been awesome! I would have posted vegan recipes anyway, but ya know, this was a nice thing to keep in mind while blogging.

you always amaze me.. honestly.. you just keep pulling such AMAZING chocolaty vegan desserts out of the air.. pure brilliance.
We are trick or treating in my mom's neighborhood this Halloween. We go over there to eat/hang out, and then Jacob (and now Hayden, too) can make the rounds with his cousins.
I could go for the hot cocoa tonight, too, although it will be near 70 degrees. I love anything cocoa. I put cinnamon and cayenne in mine.
I am not a Vegan, but love learning and it gets me closer to eating healthier each day.
We are going to friends. it is a rainy day in Georgia, not looking so good for the kids. :(

I can't blog right now because my laptop has a virus so is in for repairs, and using someone else's. BUT, I finally tried chia- I used 2 tbsp plus 1/2 cup of my me and Goji cereal...soaked the whole thing in 1/2 cu of milk overnight expecting it t go thick and creamy, and NOTHING happened! I ended up cooking it but still no gel-like texture. What kind of seeds do you use? I got a single serve sample pack from Greens +...am on the lookout for them in the UK o experiment more. Your pudding looks delish!

That Cocoa Chia pudding looks like chocolate tapioca and also looks DELISH! I have some Hershey's Dark cocoa powder in my cupboard just begging to be used... looks like I'm having pudding tonight!

oh Averie, I want to bathe in that hot chocolate! I can't remember the last itme I cuddled up with a big mug of cocoa bliss! thank you for giving me a way to use my nunaturals cocoa extract too -- I was running out of ideas! (it's great in oats by the way.. but i'm sure you already knew that!)

I just found your blog a week or so ago and I love it! I saw this chia blog late last night and really wanted to wake up to some chocolate pudding. YUM! Guiltless is right! Totally gonna remember this one for the next time I need a chocolate fix and am out of choc almond milk. The flavored stevia is such a good idea too.
The chocolate donut holes were DA' BOMB and I'm totally making them again. In fact, I'm fairly sure I don't ever need to buy a Larabar again, I'm going to start making these in large batches and ready to go for easy peasy snacks on the road.

That chia pudding looks so good. I've only made it once, and it was amazing. I didn't use cocoa, but that sounds so good! I've been looking all over for bulk chia seeds... they're a little less expensive than the pre-packaged kind.
Love your yoga. Thanks for the tips... I really want to get back into it again. A couple months I was so good, going twice a week... but then I guess I just got frustrated. I wish I could take classes with you!

My favorite cold weather drink used to be coffee. This will be my first winter without it. 7 months Raw and going strong! I think hot tea will be my crutch to get me through.

I love hot cocoa...but really tea I adore any time of year, hot or cold. Probably 6 cups a day...yikes - decaf/herbal though! Love ginger, cinnamon, peppermint, whatever - usually with stevia and a little bit of milk - and now I've actually been adding a bit of cocoa to the mix as well :)
Do you have any Yoga recommendations to do from the Internet for free? I've heard of Yoga to the People, etc...not sure....looking for something to follow at home - probably shorter routines but anywhere between 20 mins to an hour maybe - not boring or too slow but not too advanced either !! This have a great idea of a new way I can use my SweetLeaf Sweetener stevia! I'm going to try to locate the Hershey's dark chocolate powder to make hot cocoa, add SweetLeaf's milk chocolate and peppermint flavor along with some cinnamon ( maybe with some skim milk)! Ha! I am so doing it! Thank you!

I've since used them to thicken raw blender sauces (from Jo Stepaniak's Saucy Vegetarian) to become sandwich spreads, etc., and made jam with blender chopped frozen cherries & berries. I LOVE this thickening property but I'm out of seeds now and miss experimenting.
My car was totaled almost 2 weeks ago and the other driver (at fault) was uninsured. :( I have no car to go get more right now. I'd love to be considered for the 3 lbs. and promise to share experimenting I do with them (I will, anyway, once I get more ;) ).

Mmm can't go wrong with a chocolate pudding with a healthy twist. I always have pudding or a mousse (from jell-o) at least once a week. I love 'em!

Generally I'm not a pudding girl but there's something I really like about the texture chis seeds.
I cannot handle rice pudding...something about the texture. So, I'm interested to see how chia pudding would play out. It looks so good and so I'm definitely going to try it!

I just made this last night, woo! Finally got some chia seeds, and this was the first thing I made with them :] When I figured the nutritionals later, I was pleasantly surprised at how much protein was in this one little batch. It was delicious, too!
