Soaked Oats Recipe, Squash Recipe, Flashback Friday Pics

How are you doing today?  TGIF is all I can say!  What a week I've had alone with my kiddo but hubs is back now, and I am spelled off from 24/7 solo childcare. To all you single parents out there...you have the hardest job in the world.

I'm glad that yesterday's Vegan Chocolate Macaroons were looking so yummy to you.  Thanks for all the great comments and props!  Muah!!!!  And thanks to the new readers and commenters for checking out my blog!  Lord knows I don't make any money blogging so just having people say they found me, are following me, and are digging my blog helps keep me going!


And yes, they are as good as they look.

But here's what I made that's super easy...

Overnight Tropical Soaked Oats
I made these with So Delicious Vanilla Coconut Milk Creamer which is intended for coffee or even vegan baking, but dang it sure made the oats really creamy.
1/3 c dry oats
2/3 c Vanilla Coconut Milk Creamer (or Lowfat Vanilla Almond Milk from TJ's is my usual liquid)
1/4 c coconut flakes
1 Tbsp Chia Seeds (optional)
1 piece of dried mango, tore up into pieces
Vanilla flavored Liquid Stevia
1 heaping Tsp Cinnamon


Stir it all up & refrigerate for 8-12 hours

Voila.   Creamy, sweet, hearty, and with a taste of the tropics in your bowl from the mango and coconut.

Dinner was aparagus, tomatoes, greens, carrots, red & yellow peppers, cukes, dressed with OJ, agave, and cracky blacky

Oh and I also got my hands on some Nuttzo after seeing the lovely Jenny rave about it.  Dang, this stuff is really delish!

And you can see the Omega 3 happy flax seeds even through the container.  Two thumbs up for Nuttzo!!!  It's sort of sweet like sunflower seed butter, but thicker more like peanut butter, but with the crunch factor of the flax seeds that I really enjoyed!  A winner no doubt!  Slather this stuff on anything from the top of your oats to Mary's Cracks to the Matter of Flax Raw Vegan Crackers I mentioned the other day to a nice dipper for some fresh fruit.  Yum.

I also wanted to mention a great baked squash recipe that I've been making for years.  This recipe works for buttercup squash (buttercup is otherwise known as kaboucha as I learned on HEABs blog).

I have always called kabouca buttercup squash and this recipe works great with buttercups!  Or you could use it for butternut or acorn squash too:

Averie's Sweet Mustard Oven-Roasted Squash

1/4 to 1/2 c Dijon or Honey Mustard
1/4 c Maple Syrup (or agave)

1/4 c EVOO
Optional: 1/4 c brown sugar 
Seasonings such as 1 Tsp of each (some or none, whatever you like): cinnamon, ginger, cumin,
Salt & Pepper to Taste


Squash halves should be face up.  Take the mixture you just made and smear paint it on your squash and let it accumulate in the hole of your de-seeded and cleaned squash. 



Bake at 300 to 350F til done, probably about an hour.  Because of the sugar in the recipe, I would cover with foil for at least the first half of your cooking time so nothing chars.


Super easy and your house will smell delish!

And now for Flashback Friday Pictures!  Janetha and Deb are pros at this, and I figured I'd get in on the action today!

Here's me 3 days before I delivered my daughter.  I didn't gain much weight being pregnant because I had horrible morning sickness.  

I was on a Caribbean vacation 3 weeks prior to this pic where I was even smaller.  A woman told me I had a beer belly.  I was like lady, I am 8 months pregnant.  She's like nice try, nice beer belly.  Very pregnant and very hormonal, I almost beat her up. 

And this is me holding my new bundle, Skylar Lotus, an hour after I had her.  All natural childbirth.  Read: 100% drug free.  And I'm still smiling.  Tired, but smiling.  In fact, I checked out hours later. Why I didn't just stick to my instincts and have my daughter at home, I don't know but hindsight in all things, especially motherhood, is 20/20.


And this was her first trip out of the country when she was a little peanut.  She loves the beach!  Wonder who she gets that from?



 Now she's almost 3 going on 13!

What's your favorite thing to do on a Friday night when you know you have the weekend ahead of you?  I like to try to get an early start to the power walk I do nightly with my family and then try to have a mellow, yummy, dinner at home.  I like keeping things very low key these days.  Do you go out?  Stay in?  Catch up on work, kitchen prep work, your workout, none of the above?  Do tell!

Love the belly and baby pics!!! I was all natural with my second. Wish I would have skipped the stupid epidural with my first! You are SO RIGHT- hind sight is 20/20! As for weekends hubby and I keep the kids up as late as they want or until they get fussy and we chill and have relaxing family time. The week is so busy for us- once Friday night rolls around we are ready to press the slow motion button on life!

ps. The tomatoes came out really good in the magic box!! Keep and eye on them though- my smaller ones got a little too cripsy. Try to cut them the same thickness if you can. They were fabulous on my salad and sandwich today!!!

I'm usually knackered on a Friday night and don't do much at all but I have a date (wit woo) with The Boy tonight and we're having cocktails and pub crawling home - hell to the yes :D

Oh, I just love those pictures of you and your little girl! She's so pretty and looks just like you! Did you run when you were pregnant? just wondering. Mixed reviews out there on that, just curious what you did.
I really need to try raw oats. I think I'm going to go stick some in the fridge for tomorrow right now!

Love the flashback photos. I didn't gain a lot during my pregnancy, but I still looked pregnant. I'm only 5' 3 1/2," so there was no hiding the belly. I just never looked full term.

As for Friday nights, we stay in and have family night. Whatever we are doing, we make sure it's together :-)

Absolutely adorable pics of you and the little peanut! I have no children, but if I could be promised to be as fit as you were during your pregnancy I would not no be so afraid! Did you stay raw, and do yoga durning your pregnancy? I have yet to try the oats soaked over night this way- but I LOVE the dried mango from Trader Joes... It's awesome that they have the dried fruit with nothing added to it!! Though I must say that the flattened bananas are my favorite- if you haven't tried them you really should!! Have a great weekend!

Absolutely beautiful pics of you and your baby girl!! UH beer belly??? Honestly, some people have nerve! You looked incredibly healthy for a pregnant woman. Just out of curiosity did you change your diet at all when you were pregnant or were you raw then as well???

PS.. As for your ?, I get my carob chips in the bulk section of my local co-op market! Im not sure the actually brand or where they come from so Ill check this weekend. Have a super Friday Averie :)

OH PS.. Friday nights for hubster and I involve eating out then watching a movie.. I live for em!!

Love the pics! Would you ever consider doing a post (or series of posts) on your pregnancy and delivery as a vegan? Do you think your diet and exercise (did you exercise much while pregnant?) made your pregnancy any easier/harder? My husband and I are beginning to think about TTC, but it seems like veganism/vegetarianism is frowned upon by doctors, and I'd also like to have a natural childbirth - also not favored, since they can't charge more money for drugs! Just a thought. Love your blog!

And your flashback pics are so cute! I did not look preggers either. My doc said it was bc I was tall. I remember having to ride the subway and with a winter coat I did not look preggers at all. People would get up for all these slightly pregnant ladies and I was 8months!!!

My hubs coaches football which means Friday night games. So the kids and I have a weekly movie and pizza night where we "picnic' in front of the tv, watch some family movie and eat pizza and salad. I love routine!

I was a pretty teeny belly when pregnant with my Teen...2nd baby (and 13 years later) I was a little bigger but still got disbelief at how "not pregnant" I was...it's wierd how people are!

you look sooooooooooo beautiful with your little bundle! 100% drug free is AMAZING. Would love to hear about it some time~ I got close but I had complications too.

I need to go stock up on my squash now! it's time.

I want a tropical vaca! LOVE the beach pics with the palupas in the background...we went to Cabo in 06' and some days I just look at the pics and breath!!!!!!!!!!

I LOVE flashback Fridays!!! I should post something on my blog later if I have time. It's so much fun looking back at everyone's pics. I cannot get over that picture of you 3 days before you gave birth. You barely look 6 months pregnant!! Wow Averie! That stupid lady on the cruise ship probably didn't want to believe you because she was jealous! Skylar is gorgeous...a beautiful baby and a beautiful little girl. Must be the genes. :)

With Fridays it depends on how tired I am. Sometimes I want to do nothing other than lie on the couch, curl up in my sweats and watch a movie. Other times I will do anything so long as I'm out of the house. Tonight we're going to a friend's house for a party. Unfortunately I can't really drink or stay up late because we have an EARLY flight to NYC tomorrow! :)

Overnight oats is probably my most favorite way to eat oatmeal - love your combo, haven't soaked chia with oats yet.

Look at how cute you are prego! Isn't it funny how presumptuous people can be? I only gained 11 lbs. my first pregnancy and people gave me a hard time too. It was probably the crunches I did that set them off ; )

All of these new food goodies are making my mouth water! I so want to try that coconut creamer come November! My sister got the coconut yogurt and said it was divine!

Friday nights are pizza and movie night at our house. I don't get to eat the pizza but Rawvolution has a fabulous pizza recipe that is better than the real thing!
