I am stoked that the last chocolate dessert recipe, the Raw Vegan Chocolate Mousse, looked good to you! I can assure you, it is. And it's 3 ingredients: Avocado, Cocoa Powder, and Agave. Sooo easy! Tip: The riper your avocados are, the naturally sweeter the Mousse will turn out.
Moving along....Scott bought a mere 8 very large and very ripe bananas that all need to get used up, like before they even left the grocery store. But since they are ours now, I needed to whip up something using these bad boys. So here's a quick, easy, vegan muffin recipe for you!
Averie's Vegan Banana Nut Muffins
1/4 c raw cashews (didn't soak them)
1/4 c flax seeds
1 Large Banana
1/3 c almond meal (or 1/3 c whole almonds that you grind)
1/3 c brown sugar
2 Tbsp Agave
1 Tsp Cinnamon
Optional: 1-2 Medjool Dates (I used one date)
Optional: Add 2 Tbsp Cocoa or Carob Powder
Optional: Add 1/4 c shredded coconut
Optional: Add 1/4 dried fruit like raisins, cranberries, blueberries, gogi berries, etc.
Recipe Yields 8 Small to Medium Muffins
Blend first two ingredients, the cashews & flax seeds.
Then add everything else and blend it together with whatever appliance floats your muffy-makin' boat. Mine was the VitaMuffyMaker.
Batter Up
Pour into Muffin Tins
Bake at 350F for 18-24 minutes (mine were gooey at 18 mins and I took out at 20 mins for that smidge underbaked goodness I go for)
Voila, 8 little Vegan Banana Nut Muffins
Enjoy! Great for lunches, kid snacks, breakfast with a slather of nut butter on top, you name it, suuuuper easy and as always vegan, gluten & soy-free with no additional oil added.
The Yummy, Gooey Inside of a Muffy
In addition to the muffies, I whipped up a few salads. This one had greens, tomatoes, carrots, and zuke & cuke spears on the side dipped in the Homemade Hummus I made. Dressed with 3 Tbsp OJ, 2 Tbsp EVOO, and 1/2 Tsp Dry Mustard Powder all whipped together for a quick homemade dressing.
And then because I don't think I could ever OD on cruciferous veggies, I had about a third of a head of cauli, some B.S., tomatoes, dressed with the juice of half an orange, agave, and cracky blacky. I definitely get enough fiber.
For Dessert, Raw Vegan Chocolate Coconut Snowballs were calling my name, of course.

Before I had my daughter, I had 3 dogs at one point. The breed is Papillon. These dogs were the light of my life. Mid 2004.
And before I had Skylar, we had time to jet off to Tahoe for weekend ski trips, Winter 2005.
But now we have this little pumpkin who is the Number One Light of my Life, so we just jet to the American Girl store and trips to Tahoe are on hold for now.

So here's something I've been pondering....What's your favorite style of food blog format? Meaning, do you like recipes? Or are you nosey and you like seeing the pictures of what someone ate that day? Do you enjoy product reviews? Do you like long posts because you feel like you're really getting alot of bang for your bloggy buck, or do you like short-n-sweet blog posts?
Or, do you go to different food blogs knowing that you're going to get different, yet sort of predictable things, at different stops along your googlereader way? On my blog, I try to give a recipe nearly every day, but I admit, this may not be fully sustainable. Not every day do I create a great recipe; some days I just eat salads so on those days, that's what I post but try to make up for it with a product review or extra yoga.
I also have alot to say and share so my posts are content heavy and kinda long. I have toyed with shorter, more frequent posts and it wasn't a good flow for me. I just try to assemble my one big post and hopefully between the recipe I post, the random food pics from the day I post, the yoga pose, there's hopefully something for everyone. Tell me what you like when you go to blogs?

I like that each blog is different. Yours especially. Although I am notorious for being nosy about daily eats. I'm alwaysss curious to how people eat/how much etc. But your blog is a different pace, and I like it!
Yay for raw veggies, can't get enough of them. (BTW- made your kale chips last night (sans the magic box, I did em in a 200 degree oven or so), my parents and I gobbled them up.) :)
Ooh, I think I just might give those muffins a try since I have all the ingredients on hand, except for the cashews. I'll see if they turn out well with walnuts instead since I have some of those around at the moment!
I LOVE how you use nuts instead of tons of flour. Makes them so much healthier and gooey in the center. On my to-make list for sure!

The muffins look yummy, but did you realize you could probably make them raw if you changed up the ratio of ingredients? You should try it and post your results.

When it comes to blogs- I like when people really let their personalities shine through.. You always have fun things to say, and it likes talking to a friend in a way. I like getting to know people and about people.. what they eat and make... I don't care if there is always a recipe, or photos- but in general I like a bit of it all.. Your blog is great- really one of my favorites!!! I don't think you need to change a darn thing!

I like different blogs for different reasons. Some I read to get food ideas, others I read for reviews, and others I read for the humor. That's what's great about the blogs is that no two are the same!
I have a few extra ripe bananas chilling the kitch - I was thinking banana soft serve but you may have changed my mind :)

I look at several blogs so i definitely don't have a favorite style of food blog format. Things i DO like - vegan and/or raw recipes that are kid friendly b/c i'm really trying to make sure my 17 month old gets a 50% raw diet w/ the other 50% being healthy cooked vegan foods... i work full time so the quick/easy part is so important to me! so i'd like to hear more about what your little girl eats/doesn't eat, how her meals go, etc. I love that sorta thing;)
and yes, i'm also nosey and like seeing the pictures of what you ate that day, cooked up, stirred up, screwed up, and even just reading about it too. Product reviews are nice too but not a huge interested for me.
Lastly - and then i'll shutup - i love long posts because I love all the stuff you cram in there! awesomeness:) and i'm a talker and can go on and on about anything, much less stuff i love haha so i can relate! even more so though, i love blogs that post frequently, and i tend to check those daily. if someone posts randomly, i'm not as tuned in.

I just discovered your blog and I love it as is! The recipes are really great, I'd love to try some but as a college student with a very limited kitchen it might be a little difficult! Your treats look soo yummy...definitely one of my first things to do when I get home!
You just gave my last two freckled bananas a purpose in life! Organic bananas always throw me off. They never turn yellow, so I don't know they're ripe until they're past their prime. Friday night? Hot muffin action? Yes, please!
