Moving along....
Recently I was on Sarah the Foodie's blog and saw she made Puppy Chow, aka Chex Mix. I just cannot eat something I call Puppy Chow so I renamed it and tweaked the recipe in order to veganize it. If you're interested in the official recipe from the Chex site, check that out. But here's what I did...
Averie's Vegan Chocolate & Peanut Butter Chex Mix (Gluten & Soy Free)
Melt Together: 1 c dark chocolate chips, 1/2 Peanut Butter, and 1/3 c Earth Balance ( Vegan & Soy-Free Spread)
After melting, add 1.5 Tbsp Vanilla Extract to the mixture
Pour Mixture over 7-8 cups of Rice Chex
Transfer to a Plastic Baggie & Add 2.5 Cups of Powdered Sugar to the Bag and Shake It Up, Baby!
Super easy and realllllly good! Is this health food? No. Is it ok to have splurges? By all means I think yes indeed!
And every once in awhile I find a few Chex pieces that were stuck together by the chocolate and PB gooey-ness and didn't get the appropriate sugar dousing. Poor babies.
So I just eat those or shake it some more, baby!
Moving right along to something much healthier...Broccoli Salad.
I love cruciferous veggies which include brock, Brussels's, cauli, you get the picture. It depends on my mood, sometimes I lightly steam them for 30 seconds in the micro, or sometimes I eat them raw. One of my favorite ways to eat broccoli is with this awesome salad dressing recipe because the ACV (apple cider vinegar) actually "cooks" the brock. The acidic nature of the vinegar breaks down the tough plant fibers so you get to enjoy raw brock, that's been "cooked" a little, without any stinky house action going on.
But back to Averie's Raw Broccoli Salad & Dressing Recipe
3 Heaping Tbsp Vegan "Mayo" (Spectrum or Veganaise are nice. In general I avoid soy, but in this small quantity, I am ok with it. If you really wanted to avoid the soy all together, I would soak and then Vita-Mix or food processess 1/4 c raw cashews + 1 Tbsp water)
3 Tbsp Sugar (or Lucama or Agave to preserve raw status)
1 Tbsp ACV (Apple Cider Vinegar)
Whisk ingredients together
Add about 2 c Brock (basically most of 1 big stalk)
Spoon the mixture over the Brock and refrigerate for at least 4 hours, but this is one of those salads that is better the 2nd Day. Sort of like chili, the flavors marry better and it just gets better with age. Kinda like all my lovely bloggie friends do.
When you're ready to eat your Brock Salad, here are some garnishes and add-in's to consider:
Red Onion, Raisins, Sunflower Seeds, Slivered Almonds, (Soy-Based) Bacon Bits (all the aforementioned are very traditional if you look up brock salad recipes on the internet. If you know me, you know I hate onion and bacon is outta the question, but just brainstorming for you to help you jazz it up!)
Other Dried Fruit like cranberries or craisins
Other seeds/nuts such as pine nuts, cashews, walnuts
Black Pepper or Salt to taste
Even after all those add-ins & extras, I opted for Plain Jane Brock. I love the way the brock has been softened but is still crunchy, and there's a definite bite to the dressing because of the ACV but it's balanced really well with the sugar or sweetener of your choice. The plain brock was all I needed.
I also decided to make some Roasted Sweet Potato Fries. I sliced a gigantic sweet potato into fry pieces, drizzled heavy-handedly with EVOO, dash of salt & pepp.
After roasting at 350F for an hour, the first 30 minutes covered with foil, and the second 30 minutes, I flipped the fries over and uncovered them. Voila.
And plated them up with a salad big enough to make all the rabbits jealous. Greens, cukes, carrots, orange & yellow peppes, dressed it with the juice of half an orange, agave, and cracky blacky.
For dessert after getting in on a little bit of the Vegan Chex Mix Action...
...I got in on the Raw Vegan Chocolate Chip Cookie Dough Ball action. Yummmmmy.

Tip of the Day: Avoiding the stinky house smell when cooking broccoli. Yeah, that smell. When cooking brock in the micro or steaming it in general, the minute you smell it, it's done. Do not keep cooking it! Actually, it's done before you smell it. The reason why the broccoli stinks is because of the sulfur content. The more you cook it, the more sulfur that is released as the plant fibers are breaking down through the cooking process. So try to anticipate, and get it outta the micro, stat. You're scared it won't be cooked enough and will be tough? Well, there will be some carryover cooking as the internal temp of the brock doesn't immediately drop the minute you remove the heat source. Hopefully this helps you to never get brocky-stinky house again!
What's your fave kitchen appliance? For me, it's clearly the VitaGod because of the versatility but I also have a particular spatula I think I use twice a day minimum. I am also contemplating a Magic Bullet and an Ice Cream Maker. I really don't "need" this stuff, but ya know, it's fun to ponder. Right now I would say that my Cuisinart Food Processor- mostly because it's the only decent appliance that I own.. I'm looking forward to someday getting one of your Vitagods but in good time I'm sure! Not an appliance, but I have this wonderful chefs knife that the hubby bought me as a random surprise gifty and I have been in love with this little guy right from the start. I really believe a good knife can get you places! Cookie dough ice cream.. fantastic!
I'de have to say that it's my juicer at the mo... because I find the pulp extremely edible too! I have a magic bullet but it's a bit scary (noisy.. and starts to smell like burnt metal after you use it).
Thanks for the tips with the ACV 'cooking' the broc. Do you think it would work to use a fat (ie. ghee) instead of the mayo? I don't really like cooking the nutrients out of broc but eating it raw isn't my fav either!
Vitamix and this rubber spatula that I use to scoop everything out of the vitamix! Oh and my chef's knives- can't make due without that!
I'm very excited about our new oven at home- a steamer oven (like a poor-mans Gaggeneau)...can't WAIT to start using that daily!

I would love a vita mix and it's on my wish list now. I think I can live without an excalibur bc lately I have just been using the oven carefully..(now that it's not over a hundred degrees now!)

We generally don't do the soy thing either, but the grapeseed oil vegenaise is pretty awesome, and low soy. We do eat eggs, but we actually prefer it to regular mayo.
Oh I get into trouble with puppy chow! I didn't make it last year because Mallard and I agreed that we would inevitably go through a whole batch between us!
Oh I LOVE puppy chow! I haven't made it in years which is crazy, it is one of my favorite snacks. I love the pieces that missed the sugar and get all chocolatey. I'm going to make this now, thanks for the reminder Averie!

Puppy chow was never something we had at my house, and I've only had it a few times, but it is sooooo good!!

Ok Averie, I made the chocolate chip cookie balls and they are one of the best (if not the best) raw desserts I've ever had! Seriously, if I eat them all in the next hour, I'm blaming you! :P I added a blob of coconut oil to the raw chocolate chips, which I thought would help it freeze, but instead, prevented it from freezing past a fudgey texture. I had to make due with fudge swirled cookie balls instead. Such trials and tribulations, eh? Thank you! :) -Eve
I've made raw cookie dough soft serve. It is even better this time of year with the addition of pomegranate. I got the idea from the Purely Decadent Dairy-free flavor.
I also make raw versions of traditional chex mix and that broccoli salad. I think Kate from "Jon and Kate plus 8" makes a cooked version of your PB chocolate Chex mix for her kids on the show. Gotta love that stuff.
Our house overflows with appliances and their attachments, BUT I don't have a pressure cooker and I would really love to have one with all of the beans I cook. I'm trying to stay away from using canned beans, but I kind of resent the amount of time and planning it requires to make them from dried.

And my fave appliance besides the vita-mix, is probably an immersion blender, when I am too lazy to get my vita-mix off the top of the fridge. it's perfect for blending up soups and stuff.
Hello my friend! Favorite appliance...? I am hoping that it is going to be a Vita-mixer. Keep your fingers crossed that I can talk hubby into it, or should this just be a ask for forgiveness after the fact. I'll let you know.
Yesterday I spent the raining afternoon in the kitchen pretending to be Averie mixing up many of her amazing creations and cooking a few of my own. I am happy to report that my fig is full of yummy's. Thanks Averie for all the ideas.
Next time we have Broc I will be giving ACV a try. I could use a new way to eat broc. Its getting a little old raw and plain.

My mini food processor has to be my favorite kitchen appliance right now. it seems like i constantly am whipping up things in it and its a cinch to clean as well!! double love:) second would be my vitamix (i have an OLDie but a goodie) and third would be my greenstar juicer because its harder to clean than these other two!
i can't wait to try the choc chip cookies - but i WONT be making the puppy chow! I have had it in my past and know that to make it is DANGEROUS for me - i could eat the ENTIRE bowl its so damn good. so off limits haha...

Chex Mix of any kind is like crack! I couldn't live without my blender despite the fact that its leaky. The chex mix would be a good option for when I'm with my more conventional eating family members.

Oh my goodness, I used to eat non-vegan chocolate pb chex mix by the POUND in high school! I haven't had it since then, so I definitely need to make this!! Have you considered starting your own cookbook? I'm being completely serious here. You need to! :) I can help edit, if need be.

your desserts always impress me but when you whip up the savory dishes i am astonished at your creativity. i mean seriously.. you are so good at making up salad dressings! i would never put apple cider vinegar, sugar and mayo on broccoli but i bet it is a bangin savory combo! i am more into savory than sweet so i love when i see stuff like this! plus they are recipes i can use for me and not for the friends.. if i used all your sweet recipes for me i would be roughly the size of a hippopotamus ;)
