5-Minute 3-Ingredient Dark Chocolate Fudge Balls

How are you doing today?  It's Monday and I know Monday's can be kinda tough.  But just think back to all the fun you had this weekend.  Well, hopefully. 

I had a fun weekend!!!  I went to two yoga classes and met up with a fellow Phoenix blogger, like I mentioned I would be doing.   But like a maniac trying to rush out the door, I forgot my camera on the way to my meetup with Madeline of Greens and Jeans, but she was smart enough to remember hers.  Good thinkin', girl!  Madeline & I had a lovely time drinking coffee and having girl talk.   I need more of these types of afternoons because they recharge my batteries.  Thanks, Madeline :)


Of course I hung out with Scott & Skylar and also spent some time in the kitch and whipped up a few goodies which I know you're chomping at the bit for.

But first, I am really glad everyone enjoyed the Weekly Recaps & Highlights Post.  It helps you get caught up to speed with all the eats and recipes I made in a streamline format, so if you missed it, check it out.



Today's recipe though is DarkVery dark.  Just as dark as the Raw Vegan Dark Chocolate Coconut Snowballs I made.

And takes about as long....5 whole minutes.  And only requires a VitaBaller, food processor or Magic Bullet.  

But first, I need to give major props to Katie for helping me remember how easy it is to make your own raw bars, balls, and treats.  She's been on a major rampage lately making everything from Fudge Babies to Peanut Butter Babies to Mounds Bar Babies.  She has been a very busy, chocolate-goodie, creating machine!  Not to mention her great work with Operation Kindness.

But she reminded me of my post I did a few months ago about making your own LaraBars.   A little light on pics but very good content & info to ensure LaraMaking Success.  I was getting ready to move, close on a house, board a plane for a day trip, it was a hectic time to say the least.  Miss Weed has been getting in on her own MamaBar action lately, too.

It's really a snap to do, and so I decided to pimp up my game over here and get to work on some Dark Chocolate Fudge Balls!

5 Minute Raw Vegan Dark Chocolate Fudge Balls (adapted from Katie's Fudge Babies as duly noted above)

1/4 c raw cashews (not soaked)
1/2 c medjool dates, pitted (I used 6 medium medjools.  Not huge ones, medium-sized.  Mine are from TJ's and some of their containers have the huge medjools, but these were not.)
1 Tbsp Dark Cocoa Powder (I used Hershey's Dark)
Yields: 13 Balls, feel free to double, triple, quad the recipe.  I like working with smaller batches that way if I want to tweak flavors or textures, it's easier for me.  But suit your pretty self!

First, grind your cashews into a fine powder.  The finer the better.  Then add the pitted dates.

Grind again.


Add your 1 Tbsp Dark Cocoa (or Cocoa).
Or, Don't add in any Cocoa and keep your Balls Blond (TWSS)

Grind again.  I have always felt that a 2:1 ratio of dates to nuts works best when making raw bars.  And as I have mentioned before, as a Vita-Mix user, you know when you have achieved Perfect Raw Dough Consistency when the whole wad spins around like a tennis ball inside the canister.  It can happen in a matter of a second, so watch closely and don't overblend.  You will soon go from dough to chocolate puree.

And see, when it's The Right Dough Consistency, it will all just pop outta the canister, no gloppy-n-sloppy canister cleaning required.

Because it was 94F here this morning, the dough was feeling a little too warm to work with so I roughly divided into ball shapes with a spoon and popped the plate into the fridge for an hour.

Came back and formed 13 beautiful dark balls

3 Ingredients: Cashews, Dates, Dark Cocoa Powder


Oh wait 4 Ingredients: TLC added with each one of these too!


Optional Add-In's & Extras (and Katie has mentioned some of these too):
Add Vanilla, Hazelnut, Peppermint, Almond, etc. Extract
Roll finished product in Carob, Coconut, Cocoa Nibs, Cocoa Powder, Powdered Sugar
Add in Carob, Coconut, Cocoa Nibs to the "dough" mixture
Shape into logs, bars, balls, squares, hearts, Gingerbread men, stars, Christmas Cookie Cutter shapes
The sky's the limit, get creative!!!!!!!!


So you'd like to see a dinner or a vegetable, ok I can oblige.  Hugh Jass Salad with brock, cauli, tomatoes, cukes, yellow peppers, and topped with my Homemade Slaw Dressing.


And as if the Dark Choco Fudge Balls for Dessert weren't enough...


....I popped a few Raw Vegan Chocolate Chip Cookie Dough Balls, too.

As a yoga teacher, I have my own very strong and committed personal practice but there's something about practicing among other like-minded souls that recharges me and gives me the sense of community that I yearn for here. For those of you that run, bike, do yoga, or do "individual sports", do you prefer to do them on your own or with someone else?  Does having a running partner or power walking buddy help, or does it just take away from your own solitude, or does it just depend?  What do you think?

As a college cross country/track runner, there's something magical about running with other people, both people of your ability, people of lesser ability, and people of a higher ability.
But then again, I always look forward to my morning or weekend runs when I get time by myself to think and clear my head.
Everytime I see those chocolate chip cookie dough balls, I have to take a second to pull myself together so I don't lick the screen ;)

Sounds like you had a lovely weekend! Those fudge balls look AMAZING and I love all the suggested add-ins.

I think I tend to get more out of my exercise when I am alone. I get easily frustrated and self-conscious when there is someone with me. However, a partner or group in walk, run, yoga session every once in a while is never a BAD thing. You get to share your own expertise as well as getting motivated by those around you.

My competitive side needs some healthy competition when exercising. I do much better in group exercise classes or with a workout partner.

Hehe, not quite monday yet for me. It looks like you had an awesome weekend! Mine was super fun, too. That's so cool you had a blogger meet-up! I can't believe you keep coming up with all these amazing treats--your creativity is boundless! The fudge balls look amazing :)

I really like group fitness classes, but I also like running by myself. I'm scared to run by myself here in AZ, though. The college guys and scumbag men dole out WAY too much unwanted attention, and it can be uncomfortable to downright scary. So when my hip gets better, I'm all for finding a running group here. I wish I could run by myself, but there's no way to do that here :/

Averie, I need to learn not to read your posts late at night. It's 12:30am and now I'm starving. Darn you! Haha I'm kidding, I got mad love for you and your raw delicious (err, delicious-looking?)desserts.

I definitely prefer to workout solo. Well, Muffin and I have ellipticaled next to each other and that was fab, but I'm really bad at talking while doing ab work and stuff.I don't really do the yoga thing at the moment, but I totally would if I had a mat and knew the right videos/sites to use.

Gah! I seriously am bemoaning my lack of a blender! When I'm visiting my parents this winter, I'm taking over the kitchen!

I haven't been to a yoga class in ages, but I loved the feeling of community my classes provided. However, when I work out in the gym, I like being alone. Otherwise, I start comparing my efforts to others, when I should be concentrating on what I'm doing.

Most of the time, I like to exercise alone so I can think and clear my head. But, I do love going to yoga classes so that I can learn to do it the right way.

I don't really have anyone near by to train with, but occasionally I'll do a workout with someone at the gym and it's more fun than slogging it out on your own.

BTW, would you mind emailing me what the difference is between soaking and not soaking nuts?

Did I tell you my v-mix almost died twice? Once with peanuts and once with RAW almonds. Thank goodness it came back to life.

the fudge balls look great!! I made something similar to those...took flax and some cocoa powder and pb2 and agave and made them into balls and froze them! they were delicious! Now I want to try diff variations like you do

homemade larabars?!?! I have seen this in a few blogs I think it is time I get some dates and make them myself!

As I wrote in my original Fudge Baby post, the cocoa-date-cashew version is my favorite as well.

It really means a lot to me that you bothered to link back to my idea, especially since your popularity is helping to raise lots more money for the people who need it most.

We blog about raw fudge creations, but they are lucky to even get plain rice. It just makes me so sad, so I'm really TRULY grateful for every mention/ link you give me that'll help them.

It just depends! Some days I really like having someone there exercising with me. Other days I NEED to be alone in order to concentrate and really push through the workout. And of course, then I have my personal trainer, that supports me and keeps pushing me. That's just what I need sometimes.

Glad you got to meet a fellow blogger, I wish I could meet bloggers but alas, I don't think there's more portuguese people in this nice community we have.

more balls, really there are a lot of balls around here for a place so crowded with women.

sometimes I really like solitude like my long runs, other times I love doing sports with friends like volleyball or even I'm now finding yoga

Honestly- I enjoy a little practice on my own, a lot with others! I really really need my weekly alone time runs but like a once weekly run with a friend. I teach group fitness classes (obviously) and really LOVE them as I think we all feed off of each others energy.

oh gosh. everything looks amazing! wow..i cant decide which to make first!

I tend to exercise alone. To me its my "me" time where i can just zone out listen to my music or just think. I can really tune into my body closely as well which I like. With a hectic schedule my exercise time is almost like my quiet time where i feel like Im doing something wonderful for myself.

you and katie are all over the balls of heaven as of late. Oh, that's totally what she said.

I have mixed feelings about workout buddies. Last year at school I took yoga classes daily and loved the connection and unity within the class -- but then I would tend to compare myself with them and feel inadequate if I couldn't perfect a pose. I suppose if I got over that mental hurdle though I would love going to classes!

I love doing yoga classes with others :) Or even introducing others to yoga. I find it motivating, and fun, and you can see how others benefit and be surrounded by tons of positive energy. I love it!
If I am running, or doing strength or stretching, i definatly prefer doing that a lone.. haha, im not sure why..

Peppermint would be an insanely awesome addition to those fudgy balls. hot dang.

Oh gosh. I just got a comment on my blog from someone “alerting” me that you were stealing my recipes and that “don’t worry, I’ve stood up for you.” I PROMPTLY told the commenter I didn’t need to be stood up for (and I deleted her comment), and then I came over here and lo and behold, there her comment is. I am so embarrassed. Averie, we already talked about the fact that many different people can come up with the same recipe when the recipe is as basic as three ingredients, so you know where I stand on that. Did the above commenter not notice how AMAZINGLY sweet you were in linking to the charity drive?!?! Does she not know how much I appreciate all the links you gave me that are sending people to my blog to find out more about helping others in need?! I walk with friends fairly often and really enjoy that. Sometimes though I feel like I need to be alone with my thoughts. I think it just depends on my mood :-)

Until recently I have been a solitary runner and have only discovered the joy of running with other this summer. I definitely enjoy both. I like having a running buddy and I like running alone too. Balance is key, much like that yoga pose!!

I love weekend yoga! I went to a class in my city, Philly, this weekend as well, and it just left me feeling great the rest of the weekend. I also love the side crane pose! It makes me feel like I'm break dancing or something.

Girl catch ups are imperative I think on a regular basis. We certainly need em. We just need to get you over here so we can have a proper bloggy one! :)
As for working out, I like to mix it up a bit. I like working out sometimes on my own, sometimes with a friend then even if I am lucky, sometimes with a group. Keeps things interesting.

On another note, I am thinking of buying a Blendtec. Can you give me any reasons why it is better than the Vita Mix or what to look for (as I think there are a few different models?)

i often tend to do individual sports as part of a team (weird?). but now i like both aspects of training, so continue to do it...
