Cherries, Sweet Potato Fries, Chocolate Chia Pudding

How are you doing today?  I'm chillin like a villain as a solo parent.  Scott's been gone since early Sunday morning, I've been taking care of the Little Princess by myself, and can't wait til he gets home late Tuesday night!  I miss him.  But admittedly, a break from the 24/7 solo childcare will be lovely, too!

But I just want to say Thank You to everyone who wrote in and complimented me on the Raw Vegan Peanut Butter Cups (3 Ingredients, 10 Mins)!!    I had a huge response on these and each and every comment was sooo appreciated!!!!  Thanks to new readers who came out of the woodwork as well as faithful commenters.  All your input is awesome, so thank you for the lovely feedback! 
 
The PB Cups are really easy, fast, & soooo yummy.  It's so much more satisfying to eat them too knowing you've made your own PB Cup without any mystery ingredients like the store-boughts tend to have.

I wanted to feature reader Rachel's PB Cups.  She's the first one to send in a pic of her handy-work!  Which leads me to my Open Call for Reader Photo Submissions!  If you send me pics of any recipe you make of mine, I would be thrilled to post it with a link back to you!  Deal?  Ok good.  Now start sending in your chia pudding pics, your raw vegan apple crisp, your PB Cups, whatever you've got!  If you've made a recipe of mine, I can't wait to showcase it here!


Also, thanks for your comments on yesterday's post about when to say something to random strangers about their behavior and when to just let it go and carry on your way.  I really enjoyed reading your thoughts on that!

 I cracked open Pro Bar in Cherry Pretzel Flavor

Chunks of chocolate chips, cherries, flax seeds, nuts.  These bars are by no means low-cal, but they are full of chunky goodies.  You can tell what you're eating, not just mutilated, pulverized nuts, dried fruit, or chocolate.

And here's another cherryJust kidding, it's the first grapefruit of the season that I've had an it hit the Vitamin C spot.   I've been fighting a little cold, you know, new yoga studios, toddler germs, the Swine Flu, this should keep the sickies away!



And to recap some recent grub around here....
I made a Vegetable Drawer Salad.  Meaning half the veggie drawer went in:  Tomatoes, Cauli, Brock, Brussels's, Cukes, Zukes, Greens, Carrots, Yellow Peppers, and dressed it with the juice of 1/2 an orange, agave, and cracked black.

Also made a Monsterous Kale Salad with Sugar Snap Peas, Brock, Cauli, Orange Pepps, Tomatoes, Cukes, and Homemade Vegan Slaw Dressing (my new go-to).  The dressing just gets caught up in the kale leaves and my tastebuds get caught up in Loving. Every. Bite.

And after my kale salad and sweet potato fries, it was time to dig into a Raw Vegan Chocolate Peanut Butter Cup.

But I had also whipped up a quick batch of Raw Vegan Chocolate Chia Pudding

I think your blog is great and you look amazing. I am currently very underweight and have not exercised for the last 11 months and there is no end in sight. Physically and mentally going through a difficult time. Not sure how or what to eat anymore. Some people say focus on protein protein, others say its fine to have meals just based on carbs (like beans and rice, things like that). I am tired of thinking about it and hope to one day reclaim my physical abilities , but now having stopped it altogether for 11 months has me in deep fear I will not. I love your positivity in life.

hey momma! my gmail is down and being funky so i am replying to the espresso machine Q here. and NO i have not read this post b/c i hae like 5 i want to read from you and i want to read them in order, call me OCD, but i will get to it.. you are at the top of my list ;)

ANYWAY yes i looove my breville espresso machine! i dont even use my coffee pot anymore because i can brew espresso fresh all the time and make americanos.. and then lattes when i am feeling bold ;) i usually just have an americano in the morning instead of brewing coffee. tastes so much better. i didn't buy it, but i know marshall got it for me at BB&B for my birthday. i think he spent around $275. i know you love coffee so i know you NEED one! good investment!! xoxoxo

and upward facing dog...I was doing yoga for runners last night (audio only) and heard that and had no idea what that was.

SWEET

THANKSGIVING? I actually have been given the pleasure to help plan our families day with my Dad's girlfriend and her Mom. I am in HEAVEN

I helped plan the menu and they love traditional...they are hosting dinner and we are having everyone over to our place for desserts and playing cards.

so of course I have been playing.... I get to bring my baked yams (as an appetizer) and I am making the Cranberry/orange relish (raw of course and I am playing this week for a good recipe) and Cranberry Apple Stuffing...

than for dessert a fruit crisp for my diabetic guests and a few of my raw cranberry bites turned into tarts maybe (haven't decided) and a pumpkin pie.

I am so thrilled and have had NOT ONE anxiety attack over family junk! It truly is going to be a day of THANKS!

Hmm, this Thanksgiving is going to be...interesting. I'll be in NYC all by myself. I have no plans at all. It may be a little challenging knowing that my family will be together in Cinci. It's going to be my first Thanksgiving ever without my family, the people and forces in my life for which I'm most thankful. I kinda hope the day flies by or I have some awesome distractions!

We will go to both sets of parents for Thanksgiving. I cook some for my mom, but not sure yet what I'll be cooking.

Hey, I was wondering something. When you first started eating chia, did they bother your tummy due to all the fiber? I've always been too afraid to try 2 Tbs. of chia! But, your chia pudding has my mouth watering (at 3:30 in the morning!). Can't sleep, so what better thing to do than read blogs:)

Cute apron.. I want to get rain boots in that cherry pattern.. I like!!

I have seen those pro bars everywhere but have never tried.. I enjoy the fact that you can actually see the ingredients. Are they high in calorie?? I am a tad blown away at how high the cliff bars are (unless you are using it as the bulk of your meal or worked out hardcore, it seems too much for me!)

Hub and I are stayin in NC for Thanksgiving. We wont be heading up to PA until Christmas. He has virtually no time off work so the trip is not going to happen. Its nice.. we can make a lovely meat/dairy free meal and not have to worry about pleasing anyone else.

Looking hot in that apron... :) Love it! Traveling home for the holidays and the twins do most of the cooking/baking... so we plan ahead though this year going to be different... cause the older sisters are planning to help in the kitchen too. so should get interesting ;)

No matter how hard I try to catch up I can never seem to stay on top of your posts. Reese's PB cups are my absolute favorite!! Anything with PB floats my boat so you can imagine how ecstatic I was to see these. I HAVE to go back and make the recipe!!!

Thanksgiving this year will be 9 of us - all of my in-laws. I'm excited about seeing my SIL and her husband again, but it is going to be a full household. Fortunately enough they take over the kitchen and cook everything, but not without giving us a grocery list 2 miles long, most of which ends up getting wasted and/or thrown away..

mmm thanksgiving for me is totally more about the family time then the food. we usually have the standard turkey with the sides and what not all pretty healthy and then im making a healthy pumpkin pie and i'm thinking i miiight even make your pb cups :) my fam would flip over those! but i just really love hanging out with the family at my grammys watching football in our sweats :) its totally my fav holiday!

Thanksgiving. Well, I'm making rolls for the family dinner and a huge salad for me and to share with everyone. I thought it would be hard to not eat cooked food come Thanksgiving but I'm totally cool with it now :o)

As for turkey day we go to my parents. I am in charge of a pomegranate cheesecake (hopefully what is in my head will translate well into reality) and cocktails. I usually also throw together some sort of salad and I might be bringing some sweet potato tarts as well. Stay tuned...

Must make those PB cups. I LOVE Reeses but haven't been able ot have them in FOREVER.

I need an apron and those are just too adorable for words. Perfect for a chef who is whipping up some amazing goodies.

I'm at home for Thanksgiving no idea what I'm going to eat though. Do I try free range turkey or what? I don't really want to go against my vegan ways, but the kitchen is tiny and I'm the lone vegan in the house. Any ideas for an entree?

We always go up to my great aunt's house, which is always super nice. I volunteered in return for the invite to use my culinary skillsss to make all the desserts. So I'll be pieing it up next week: dairy and gluten included. baha.:) But I may have to whip up an Averie pumpkin pie. that recipe's been staring me down for like two weeks.
