Easy Vegan Thanksgiving Recipes: Pumpkin Donut Holes, Potatoes, Salads

How's this Holiday, and hopefully short, week been for you so far?  I just got back from sitting in on the yoga class I'm going to be teaching next week, like I mentioned before.  It was a great group of people and a lovely facility and I am so excited to get started teaching there! 

And, there are just a couple more days til Turkey Day Tofurkey Day.  Just kidding, there will be no Tofurkeys here. But, I'm actually making a traditional Thanksgiving Dinner for One:  My Husband.  Skylar and I are of the veggie persuasion, but Scott adores traditional Thanksgiving Day fare, and since we have no family in town that I could just send him to to mooch a meal from, yours truly is cooking.  I have to brush up on my turkey & stuffing making skills I've got the raw vegan desserts down pat, though!

Speaking of which, I'm glad you enjoyed my Thanksgiving Desserts & Grocery Finds post.  I had great comments from so many of you.  Thanks for your suggestions about which dessert I should make.  Lots of you said, Make Both Apple and PumpkinLove your thinkin' on that!

My Vegan No-Bake Pumpkin Pie (Gluten & Soy Free, too!)  is really easy and in case you still have an extra can of pumpkin puree laying around, that recipe will help you use it right up, for sure.


 And the Raw Vegan Apple Crumble.  Totally a fave of mine.  I love that dessert!


Especially the slurpy cinnamon-infused agave juice that I love to drink sauceUhhh-huhhh, love it!

But moving along....  
In case you're not interested in making a Vegan Pumpkin Pie or a Raw Vegan Apple Crumble, then maybe I can twist your holiday dessert arm with my...


Raw Vegan Pumpkin Spice Donut Holes - 5 Minute Recipe   It's extremely fast & easy.  And, other than the cooked pumpkin puree, they're raw.  Some people get very technical & uptight about verbiage so I wanted to clarify for the undies-in-a-raw-bunch-crowd.  They're no-bake but rather than screwing up all my existing labels & tags, I am just sticking with the word Raw. 


These little Vegan Pumpkin Donut Holes are light and airy because they are nut and date-free.

And they are pumpkin-ey and slightly sweet, without being over-powering in either of those departments.  Try a Raw Vegan Pumpkin Spice Donut Hole, you'll like 'em! 

Options, Tweaks, & Tips:
Substitute canned sweet potato, fresh or canned squash puree you may have on hand, or something else that floats your boat instead of the Pumpkin Puree.  
Roll donuts in coconut flakes at the end
Roll donuts in cinnamon & sugar
Add Chocolate, Carob, or Raw Cocoa Nibs either in the mixture or dust over the top at the end
Add a Smear of Nut Butter or as a Dipper on the Side



Whatever you do, if you're looking for a last minute dessert, these Vegan Pumpkin Spice Donut Holes are sooo fast & delish!

 

But maybe you're not in the need of any dessert recipes and you'd like to roast some potatoes as a lovely side dish...
Well, I roasted these potatoes.  Maybe these will float your tater boat.



Or Sweet Potato Fries

You need Raw Veggie & Salad inspiration, you say?
Try a lovely massaged Kale Salad with Homemade Vegan Slaw Dressing
 

Or a Vegan "Cesar"-Dressing Inspired Salad

Or just a lovely, simple, Green Salad with...


Averie's Vegan Holiday-Spice Orange Vinaigrette
1/4 c Orange Juice
2 Tbsp EVOO
1 Tbsp of Apple Cider Vinegar
2 Tbsp of Agave
Pinch of Ginger and/or Nutmeg and/or Cinnamon and/or Black Pepper

Whisk Until Combined

Drizzle and Enjoy!!!




(or the Raw Vegan Apple Crumble or the Vegan No Bake Pumpkin Pie!)

What's your picture taking strategy on the holidays with Friends & Fam? Some families are very into getting that staged, perfect shot.  Other people roll with the impromptu & candid photos, but some people despise getting their picture taken, and nothing worse than an relative getting all bent out of shape over a "bad picture".  Usually though, I think the candid shots are the best shots.  And for those of us with kids, we all know, that trying to plan or stage a photo op is like asking for trouble because it never pans out.  So I guess I lean more towards candid shots but I do enjoy getting a big massive, staged group photo, too.  What's your strategy with holiday photos?

We usually do a photo together, but otherwise the rest are candid.

Your food looks so incredible!!! I finally made the peanut butter cups tonight. I didn't have nutritional yeast - what does that do? I just used the choc and pb. OMG YUM!! You have incredible recipes. Can you please move closer to me? We need to be real-life friends. :)

Oooh I want those pumpkiny donut holes! The yummy salads, too. I can't wait to go home for Thanksgiving! My dad is a total photographer, but his specialty is those candid, "natural" shots. So he basically just takes pics the whole time and we all learn to ignore him most of the time and pose for the rest of the time ;)

I completely agree that candid shots are the best...unfortunately I am horrible at taking them. My brother got some great ones at my cousin's wedding this summer and on our ski trip. I guess he has the knack while I have to stick to the "stand there and smile" ones.

Kudos to you for cooking your hubby a T-day feast just for him!! You deserve the wife-of-the-year award. I'm seriously thinking about making your pumpkin pie, except that we will already have a homemade pecan pie, a store bought pumpkin pie and leftover birthday cake. TOTALLY ridiculous but I have no say in anything this year since I am not participating in cooking (simply providing the whereabouts).

And your husband should be very, very thankful. I bought a turkey with my husband, but I made him cook it. The bird is not my problem. I'll make the salad. :-)

Roasted potatoes are one of my VERY favorite things and they are always on every menu.

As for photos, I'm definitely a candid shot kind of woman, snap, snap, snap, with a few casually posed photos. I would never waste the time I could be having fun and eating delicious food worried about staging the PERFECT shot. Believe me, I grew up in a household where we spent hours every holiday trying to do that and it was miserable and made us all grumpy. Not a good idea!

that holiday dressing with the cinnamon and nutmeg is a great idea! I sometimes ONLY think that these spices taste good in baked goods, but this is so not true!

I am glad you liked my review on the GF products, the bread was seriously awesome...it has to be toasted though! it was nutty and delicious! I didn't post a review for the cookies bc I hadn't tried themyet but i broke into one later last night and it was nothing to write home about. it acutally tasted like pure butter-not my cup of tea! I will let you know about the muffins!!

Candids are the way to go. I really just love to catch those moments that seem to sneak by. Though my niece will let me take goofy "Staged" photos which are also adorable. Pumpkin donuts- yum :-)

I saw a tofurkey at the store the other day. Dang, those things are twenty bucks!! For a hunk of heavy tofu? No thanks.

Yes half of the family eats regular Thanksgiving fare and the other we eat a little different : ) My second older sisters is the camera person, so we have a lot of candid shots and actually "set-up" shots.

Aw Scott is a lucky guy!! Cant wait to see what you make him. Its funny I had like 3 or 4 people at work ask me if I was having Tofurky.. Im like UH BLEHHHH.

We have been getting Christmas cards from our friends with them posed with their perfect babies and chocolate labs. Hub and I joke that we are going to hold our plants and take a pic and send em out to our families since we have neither of the above. lol I enjoy the candids personally!

We tend to go for candid, although there's usually one shot, at the end of the night when everyone is tired and full and ready to go home, when my dad gets us all together for a group shot.

haha it's SO hard for me to get my family together for a picture. my brothers are major buttheads and it's like a challenge to get them to take pictures even though they're 25 and 20 haha. one time my mom had to bribe my younger brother just to take a picture. sad i know haha

Look at you with all your Thanksgiving creations??? They really all sound delicious and I love the fact that they’re all alternatives to the holiday favorites!! The apple crumble is totally up my alley, especially the streusel topping. But then I saw the curly sweet potato fries and I ALMOST forgot I wanted the apple crumble. hehe

It’s so cute that Skylar can’t tell the difference between fritos and flax. Hahaha She’s totally set up to grow into a cook food cook like her mama. Wait till she get so middle school and all her packed lunches are so much more fascinating than her classmates. She’ll totally be the coolest girl in school!! (Gotta admit I’m a little jealous. I definitely didn’t have that during my childhood!) Hope you have a terrific thanksgiving Averie!!

I'm mostly a candid kind of gal. I like funny pics vs. the staged kind. They both have their place though and if everyone is wearing decent clothes, hair brushed, faces wiped off - I do hope to get a nice family pic tomorrow! Fingers crossed.

I am leaving my camera at home for the occasion and really attempting to just focus on the company around me rather than blogging/food/etc. A challenge for sure but it's a slight relief to tell you the truth.

Living in our area it's so hard not to be tempted by the stores and treats out there but your blog helps a lot. I just recently discovered it. Question: If you do not have a Vita Mix. Is there an alternative? I recently moved and am in search of a blender but not ready to commit to a one yet. Or a completely Raw diet. Oooh, you just reminded me I have a bag of Raw oats in the pantry so I can try out the apple crumble, yipppeee!!

Those roasted veggies look soooo good! I can't wait to make them! Give me a month or so and I'll be snapping pictures to show you : ) And that vinaigrette looks so yummy!
