Hip, hip, hooray for the Raw Vegan Dark Chocolate Coconut Snowballs from yesterday. I loved the yummy comments. Seriously, so easy. I try to make all my recipes easy. As I've regarding mentioned before my thoughts on recipes and to me what entails a good recipe, well time commitment and a short ingredient list are two key things, and the Dark Chocolate Coconut Snowballs deliver on both fronts.

So moving along to another recipe that delivers on the Easy but Delish Factor is Raw Vegan "Pasta" Noodles & Raw Marinara. Gena inspired me to take my own stab at Raw Vegan "Spaghetti" here
Yesterday I recreated it but tweaked the sauce a smidge.
Here's what I did this time:
Spiralize 1 or 2 zukes. (If you're curious about what spiralizer I use and the total 411 on it, check out this post, and the corresponding backlinks in it. Here's a tip...it's 29.99 on Amazon. Go get one, 'nuff said)
Then to make Averie's Raw Marinara Sauce
1 Tomato
1 Deseeded Red Pepper
5 Baby Carrots
2 Tbsp Dried Basil (fresh is great but I didn't have it)
1 Tsp Dried Oregano
Tiny pinch of salt or more to taste
Twist of Black Pepper
Optional: 1 Medjool date and/or 1 Tsp Agave and/or Stevia to taste (I used the date and 1 Tsp agave because remember your grandmother who added a dash of sugar to make the marinara sauce taste better? Same premise here.)
Optional: Garlic, onions, mushrooms, 1-2 Tbsp EVOO or another oil such as flax or hemp. If you use the drizzle-in-while-appliance-is-running method, that's awesome. As a VitaLover, I have a hard time with that because I don't want red sauce spraying everywhere so I add at the beginning if I add it at all.
Combine All the Ingredients.
Grind, Blend, or Food Process your Ingredients into Red Sauce.
Leave it as chunky or as smooth as you like.
I like it fairly chunky. Too smooth and I feel like I am either eating soup or baby food. Neither of which I am that fond of.
And then top the Zuke Noodles with the Raw Marinara
Mix it up and voila, dinner is served.
The entire raw vegan homemade meal, including appliance cleanup, is a 15-20 minute deal. Seriously.
Optional Add-In's & Extras:
Mushrooms
Tofu Meatballs/Sausage
Nut/Bean "Burger" Pieces
Real Beef or Turkey Meatballs for that non-vegetarian in your life
I added in nothing extra because just this was dang good.
Dessert involved dipping into the Raw Vegan Dark Chocolate Coconut Snowball Freezer Stash.
Just what the Raw Doctor ordered. Because after the Red Marinara Sauce dinner, something Dark-n-Cool on the palate was lovely.
And there was also a Fresh Batch of Raw Vegan Chocolate Chip Cookie Dough Balls that I made and enjoyed.

QUESTION:
Do you use sweetened or unsweetened coconut? I can only find the blue package of sweetened at the regular grocery store. Do you buy yours from TJ's or Whole Foods? Which brand is it?

so i think i've officially freaked my parents out with all the "blogger" food i've been making/eating. i personally think they're afraid to like it, as opposed to their boring plates of lettuce and chicken. but today i made the coconut snowballs, and called them haystacks, for their liking, and left out the fact that they were a blog discovered recipe. THEY LOVED THEM.

That raw pasta looks scrumptious -- great idea to add carrots to the sauce! And I love how many good sauce options you listed...lots of variety there. I love a good raw pasta dish, that is definitely one of my favorite quick dinners. Chunky for the win!
Other quick dinners I like are hummus with veggies, or any dip and veggies. I like really snacky meals, lots of little bites to choose from. Makes me feel like I'm at a party when I'm in my living room, plopped in front of the tv in my pajamas!
Lovelovelove that marinara sauce! So easy! A spiralizer is on my very long list of kitchen appliances to get. I don't have a food processor yet, so that's still #1 (c'moooon Christmas! :P )
I am obsessed with pita sandwiches, so that's always my go-to easy dinner. Whatever fresh veggies I have on hand gets thrown in one, with whatever protein source I can find, usually slathered with some hummus, and gobbled up with a side of carrot sticks :) Yummm.
Oh, and those cookie dough balls look seriously amazing. I have a bag of raw cashews in my cupboard that would be perfect for those!

I have a question...if you lived somewhere really cold, would that affect your meals? I am not raw, but almost ALL the food I eat is eaten cold and now that it's winter (and I have no heating in my apartment) am rethinking things!
Go-to dinners...yogurt/oatmeal/fruit/nut butter messes. I think I have had those almost every night since I got back. Failing that, wraps/sandwiches are good, stir-fry with straight-to-wok udon noodles or ready-to-cook tortellini.

My favorite dinner is the same as my favorite breakfast - Lettuce (I really prefer iceberg but try to do romaine because it is better for me (insert eye rolling)) tomato (usually roma but whatever I can get local is perfect) cucumber fresh basil torn up fresh cilantro a white onion sliced and balsalmic vinegar and salt - no oils though! OMG I literally live on this salad!
I really keep tossing and turning on the spiralizer...

Oh Averie my stomach is growling so much right now...I am waiting for Chris to be ready so we can go out for dinner and I thought I'd check blogs while I waited. Now my mouth is salivating! For a quick lunch, I'll do a tofu sandwich by layering whole grain bread with mayo/veganaisse, extra firm tofu and sprouts/lettuce...easy and delish.

I got my RFW order and promptly made the dark chocolate snow balls, yum!
My go-to dinner? That would have to be salad. I just eat it with my family while they're eating there's but I just don't eat the "main course". It's so much easier that way : )
