But I've also been in need of some new master bedroom pieces like a dresser, nightstand, and new bedding. I ended up at trusty West Elm and here's a few pics of the new bedding. Organic duvet and shams that are a pale silvery blue-ish & a barely there white print. A high sheen silver Euro pillow and then a fluffy white pillow.

A couple of pieces of furniture are being delivered Wednesday, but sadly some is on backorder. Sigh. Good thing I have a nice soft pillow to cuddle up with in the meantime. I am groovin' on the coolness of the room. Previously it was cream and ivory and warm tones from West Elm and now I like how the white & silver ices the room down for winter. Winter, yeah, it was 94F today.
But home-decorating aside, I'm stoked so many of you were into the Vegan No-Bake Pumpkin Pie recipe I made and I'm hoping my recipe makes it's way onto someone's Thanksgiving dinner table! I know I will be remaking it for T-Day, no doubt!
But moving onto today's recipe, vegan fajitas. I had been feeling the need for a warmer, less raw dinner and was on Cindy's blog and saw she recently made green pepper & mushroom tacos. I decided to take my own stab at something along those lines. And vegan fajitas were born. Here's what I did:
Averies's Vegan Fajitas
2 Portobello Mushrooms, chopped (approx 2 c, loosely packed)
1/3 c red peppers
1/3 c yellow peppers
1 Tbsp Cumin
1 Tsp Ginger
2 Tbsp Lime Juice
3-4 Tbsp Fresh Squeezed Orange Juice
Couple twists of Black Pepper
Note: No Oil Needed! I love portobellos but hate it that they are like sponges for oil. So I skipped it entirely and the veggies sweated down, and combined with the citrus juices, no oil needed. Yay!
Combine ingredients in a sautee pan
Sautee to your desired liking
and make Averie's Vegan Sweet Ginger-Lime "Sour Cream" Sauce/Dip
1/4 c Vegan "Mayo" (or non-vegan mayo, whatever you like)
2 Tbsp Lime Juice
3 Tbsp Sugar (or omit the sugar and use stevia and/or agave to taste)
Scant 1 Tbsp Ginger
Combine all ingredients in a bowl
Whisk until smooth. Tangy, sweet, tart, lovely.
Take your Fajita Filling Mixture and place in wraps. Mine were too overstuffed to wrap up well.
Optional garnishes include:
Sour Cream and/or my Sweet Ginger-Lime "Sour Cream"Sauce
Cheese (regular, soy, goat, vegan "nut" cheeze, etc.)
Tomatoes
Black Beans
Corn
Onions
Lettuce/Greens
Other veggies you love
See the sauce
Or skip the wraps entirely (which is what I did) and just eat your fajita mixture tossed with other veggies and use the Sweet Ginger-Lime Sauce as your dressing.
This dinner gave me the feel and satisfaction of cooked food but because the fajita mixture had cooled a bit and I ate it sans fajita wrap and with other raw veggies, it still felt raw-ish. I like the crunchy, crispy, fresh feel of raw food, but with a little of the edge taken off from the cooked Fajita mixture. This vegan dinner totally rocked and is going to go into rotation around here!
For Dessert, I slathered some of this new Almond Butter from Rejuvenative Foods on a few Mary's Crackers.
I love that it's organic, raw, and the only ingredients are Organically grown raw almonds.
To me the Rejuvenative Foods Almond Butter is a little sweeter than other brands of AB that I've tried, like Maranatha or TJ's. Good stuff, two thumbs up on it! It's a little spendy, but a nice splurge, no doubt.
But dessert lover that I am, AB on crackers was not going to fully cut it. So I feasted on the Vegan No Bake Pumpkin Pie. My piece was the 2nd one, Scott's had the whippy.
Yoga Today is Parivrtta Parsvakonasana (Revolved Side Angle Pose). When you are trying to get into this pose, because you are crossing the entire right side of your body over to your outer left side, you need to reach your right arm up, take a big inhale, reach up, then cross over on the exhale.

Do you have a favorite way to look neat & lady-like while eating really messy food, like fajitas with the filling falling everywhere? Or even sometimes when I dig into my huge bowls of veggies, aka my Hugh Jass salads, I feel like I have dressing running down my face and brocoli bits stuck in my teeth. Thankfully I am married and not on dates trying to impress anyone but ya know, I still like to have some manners. Any funny dating stories of eating messy stuff in front of your date or messy-food-made-neater tips?

Love that you enjoy almond butter as much as me! I can't get enough of the stuff! Personally, my all time fav is TJ's raw natural crunchy almond butter. But, maybe I'll give this one a try:) Nice blog!

The vegan pumpkin looks great...I think the vegan dessert I'll be using this Thanksgiving will be a vegan brownie base topped with vegan pumpkin pie filling, but your pie crust is definitely tempting!
Your home furnishings and recipes are just gorgeous (as always). I can't tell which I am more excited to try, your veggie fajitas or your pie. Okay, I'm lying. I want to make that pie. Don't you think I should do a test run before Thanksgiving? :)
OMGoodness...everything here is just totally droolworthy, I am slobbering all over my screen. I love love love Mexican too, so I quite often make a similar kinda of dinner.

Hahaha, I never worry about looking neat and lady like no matter what I'm doing! Personally, I think that is just a way to control women and make us more meek, timid, etc. So, when I munch on sloppy fajitas I MUNCH my rockin' feminist heart out....and my t-shirts can attest to that fact!
Speaking of fajitas - YUM! I LOVE portabello mushrooms, they are SO perfect in so many different ways. I am going to have to try that sweet ginger lime sauce, lime always makes everything better.

Almond Butter is to die for. The three of us go through about 4 jars a week! Dan likes to eat with carob chips mixed in for a treat, Blaine is P&J kid on spilt bread and strawberry jam. He always ask why his sandwich looks differant from the other kids. Do you thinkits alright to tell because his mama is smarter and love him more? And I love my AB mixed in a little carob powder, and coconut milk makes kind of a pudding, yummy. But could use some whippy anybody ever try making coconut whip cream?
We're getting ready to go away for the weekend. Excited and nervous Blaine is staying with the G.P.s. Not his first time so they'll have fun. I'll just miss him but I know the break will good for me and Dan. Going cave diving. It can be a pain to pack since I now have to pack most our food to. What do other people do about Vac and food? Do you just go with it and not worry so much about your choices or do you try and remain true to deit of choice and bring what every you need with you?
As for food manners? Lots of napkins. A big piles of them.
Dating stories? Been married to long to remember 15 yrs in Dec plus Dan and I didn't date long enough to have any. 3 months...love at first sight.
Chia seed. I am dying to try but hard to find here in wilmy-wood. and they had a specail on them once but to expensive for trying. I was thinking about them in my carob pudding I make. So sign me up baby! Have a great day. XOXO Rach

On a first date, the guy and I ordered a heaping plate of nachos. I picked up the perfect warm tortilla chip loaded with gooey, gloppy nacho goodness, and apparently he could tell I was deliberating on how to eat it politely. He told me to just cram the whole thing in my mouth, so I did, and he was most definitely impressed. Manners are overrated. ;-)

As for messy eating, yup, that's me. I try to be ladylike but I usually end up with stuff all over my face and always need to floss the veggies from my teeth after eating. Broccoli and spinach are the worst!

Hmm... I am one of the messiest eaters EVER. When I eat a salad, more of it ends up on my face than in my mouth! I just smile sweetly and it's kind of okay.

The fajitas look great! I love how mushrooms can provide such a "meaty" texture that you don't even miss the meat! And the lime sauce sounds great. What's Mexican food without lime, right?!

YUM! i'm curious about what wraps you use - i know u said you didn't eat the wrap but - if/when you do, what kind do you get? i love the corn tortillas to use as wraps but they fall apart SO easily that my 'fajita' never holds together! but the only other option i've seen is flour tortillas - which have gluten. anyway, just curious!
also on your pumpkin vegan pie (YUM!) do you store it in the freezer or fridge? if from the freezer, is it too hard to cut when your ready?
Last but not least - i'm wordy i know ha - what type of running shoes would you recommend? the soles of my feet have been killing me and i think its probably the shoes...
