No kale on the island now (serious withdrawals, I tell ya!) but there's Romaine
So I'm happy with that and my Homemade Vegan Slaw Dressing. Sweet and tangy and ooh-la-la love it! slathered all over the greenery
Tip of the Day Time:
What I do is this: I take a handful of brock florets, put them in a microwave-safe bowl, add about a cup of water, put saran wrap on top of the bowl, and nuke the whole thing for about 90 seconds. Just long enough to take the raw edge off. Then, if I've overcooked it at all (veggies have to Snap and Crunch! for me to be satisfied), I take a handful of cold, uncooked florets and mix them all together and the cold crunchy raw ones blend in with the warm ones and broccoli perfection is achieved. Priorities, I tell you!
And for Scott I made, Homemade Tahini "Cesar" Dressing on Romaine Lettuce, Topped with Smoked Turkey & Cheese and Brown Rice.
And Sun Dried Tomatoes & Cukes hit the spot he said!
Breakfast Plates of Muesli Bread and Bananas
And we've been eating Fruit up the Ying Yang:
Bananas
Grapefruit
Mangoes
Pears and Muesli Bread
And the local Dutch Coffee has been drank up the Ying Yang... in....
... the Coffee Pot I brought from home! Remember that one?! haha!
With My NuNaturals Vanilla Stevia Drops that help my coffee taste so sweet and ahhhh....perfect.
We've also had lots of fun at the Beach
I love the beach right in front of the Hyatt. That's where we usually park ourselves. All the beaches are public here, even right in front of the nicest hotels. Score!

I enjoy traveling and seeing new places and faces, experiencing new cultures and people, but I am also a creature of habit, to a degree, and much more so when I was younger. However, both traveling frequently and having a child will take you wayyyyy outta your safe zone, I tell you! But anyway, do you like to travel? Or are you a homebody? If you could go anywhere in the world, where would it be?
There are a couple ladies I know going to India soon, Miss GC and Miss Shanghai Monkey, and I wish I could ball myself up in their suitcase and go with them! I have always, always wanted to go to India. I know some people and yogi friends that have gone with small children, but I want to wait a few years until Skylar is older and then maybe go for a month or so and stay on an ashram and immerse myself fully in the culture and the experience, with Skylar in tow! How fun and it's something I look forward to. Because let's not forget, she likes downward dogs, too!

Even when you are in Aruba we are on the same blogging schedule! If I could go anywhere I would go trek around Argentina with my best friend Margaret who has lived there for almost 3 years and I still haven't made it down there! I've been lucky enough to take some great trips, but I would say my cross country bikes trips are definitely the ones I cherish the most! Can't wait to see you back in the phx!

40g flour is about 1/4 cup, so 60g would be 2T more than that.
I’ve never made them without the “egg” but maybe you could use a flax egg?
35g applesauce is a bit more than 2 tablespoons.

I can't believe it's almost time for you to go home. Time has been flying. While I love the holidays and the 'break,' I am kinda ready for it to be back to normal. Those pictures on the beach just look so amazing!!
Wow - I am seriously craving some beach right now! I have officially had my fill of cold and snow!
My best vacations have been Cabo San Lucas and the Caribbean - anywhere with sunshine and an ocean!
I am jealous of that muesli bread - looks amazing!
Of course, on the other side, I LOVED London and had a good time in Paris. I really want to go back to London, Mexico, and the Caribbean, and I would love to see Italy - Sicily in particular - and Greece.

Your trip sounds just spectacular. No shame about the coffee pot! A girl's gotta do what a girl's gotta do sometimes. Also, I like how you feature what you prepare for Scott. Because I am not strictly anything when it comes to my diet, especially when I am with my family, I like to adapt healthful meals that everyone can agree with.

As you know, we are going to Hawaii in March, and I'm a little nervous for packing and how we are going to eat since we weren't vegetarian last time we went. We are in a condo, so I'll prepare a lot of our meals (you are providing great inspiration) but I want it to still be a vacation and be able to relax and take a break from cooking too! I can't wait for the fresh fruit and coconut...may be one of the things I'm looking forward to most!!!

I have not really been able to travel much yet...but it's on the to do list. My dad treated us all to a Cabo trip 3 years ago (to the day) and it was the most fun we'd ever had.
I would adore a trip to Italy..and just stroll the country side!
But really I would go anywhere! I am a home body but also get cabin fever pretty easily.
I am so glad you got a chance to get away, I would snuck myself into YOUR suitcase If I thought i could get away with it! haha

I LOVE traveling!! Outside of the US (not counting Canada because I can spit and reach Canada living in MI) I've been to Czech Republic, France, and Italy. I'd kill to go back to Italy!
That's a good tip for eating broccoli in salads! Raw broccoli tends to give me awful stomach pains, but I do love it in my salads ;)
If I could go anywhere in the world right now it would be England!! It's been at the top of my list for a while. My best trip ever though was to Mexico with my mommy. We stayed with a local family, ate wonderful food and just had a great time together!
I definitely carry vanilla stevia whenever I go far from home; I swear plain yogurt and other tart things need it for some perking up.
I definitely am a homebody when I'm around home, but if I ever get the chance to distance travel I love it. I would die to go to Rome or Greece again or England for a first time. Of course, I might have trouble smuggling pb through security(I've had it confiscated before) but I'd try
Such wonderful memories Averie. I promise that Skylar will remember these trips her entire life. Traveling is so important at a young age, even if it can get a bit difficult or stressful. What a great idea to take Skylar along to India when she's a little older. Maybe if you wait until she's in her teens, she can enjoy the yoga WITH you! :)
I took a cruise 2 years ago, but I honestly didn't love it. However, the few hours spent on white sand beaches were just heaven. I'd love to travel to Costa Rica, Jamaica, Aruba, or some "white-sand-beach" area and simply relax and unwind in the sun, do yoga, zipline in the forest, swim in the ocean, and snorkel! I'd also LOVE to travel to Europe someday. Paris is definitely on my must-see list!

I absolutely love to travel. Its one of my favorite things ever and I would gladly trade anything I have to be able to go on some amazing trips.=) I think there is something about getting out and experiencing other countries in their entirety that's absolutely life changing. I love it! And you are so right, those memories last forever.

Your vacation sounds like it's been wonderful, and trust me, I understand the dreaded I've been gone for 6 weeks mail, grocery lists, errands, etc. I always freak out our last few days in Colorado and start making lists like crazy. However, it's like you said, focus on the memories you made. You'll get everything done when you get back, and you don't have to do it all in one day. That's what I tell myself.
We missed you yesterday. You were there with us in spirit. :)

Yes I'm with you- I would love to go to India- and Italy (since I'm mostly italian!) But really I guess I would go anywhere if I had the chance.. I've never been out of the country unless you count Canada- and would just really love to get out there!!! I am always eating a ton of fruit.. I swear that I could live on the stuff.. Welcome back from Paradise, Averie! :) I really love that picture of Skylar practicing her flying skills. Traveling - I love to travel but sometimes I feel like I hold a caveat to the places I choose to travel, based on whether or not my lifestyle (high-raw, vegan, exercise) can be sustained in that particular place. Which doesn't make me much of a real traveler, now does it! Aside from that though, I would love to visit Israel or check out the Alps in Switzerland! :)

I made Katie's pancakes w/out the egg (used the powder sub) and used coconut flour w/rice milk and stevia. They turned out great and full filled my urge for a pancake. No wheat/ gluten/ dairy for me. Both me and my dd have celiac and now I am sensitive to even GF oats :(
I love to travel, but like you, am SUCH a creature of habit! I must get my workout in daily even on vaca or mama is not a happy mama! I have my "routine" both pre and post trip which drives my hubby crazy, yes, a tad bit OCD but, its me and he loves me for it!
We have 2 amazing trips so far. One was a very spur of the moment drive from AZ to Vegas with our 7 yr old in tow. We do Vegas all the time and keep it family friendly. Lots of fun, spa, yoga and good times. We got lost due to Hoover Dam construction detour and drove thru AZ, CA,and finally to NV. Took over 8 hrs ( norm 3.5hrs).The extra time made for some amazing memories, had to be there. Trip ended with Bella asking "mommy, what's a stripper"? Time to re-think Vegas.
Our other trip was an Alaska cruise this past May @ the height of H1N1 freak out. We tend to have the worst luck ever. You guessed it, our entire ship came down w/ flu, including our dd. We were totally left in the dark. My hubby ( who is a Dr) even asked the ships dr what was going on. No answer. So here we were in the middle of the ocean w/ a 7yr old w/ 104 fever. She also has asthma, so it was scary. We always travel w/ a mini pharmacy ( mostly homeopathic remedies). We gave them to Bella and we took as preventative. I can voucher, clean eating and homeopathic works. Neither I or my hubs got the flu and Bella bounced back quick w/ out asthma. We learned alot that trip on balance, patience and the strenght or our family! Didnt hurt we had beautiful Alaska while being trapped in our cabin! Safe trip back to AZ :)

I love that vanilla Stevia extract in my coffee too :D And the sun-dried tomato with cucs + dressing look so good! AND that muesli bread = yummm. Girl, everything looks appetizing. And SKYLAR! Oh my gosh that girl has so much personality I love it. If you ever made a video post you have to make sure she has a little guest spot.
I'd love to go to India as well. Gosh, I can't even imagine, but I truly think it's one of those places that has a profound impact on people.. no matter who you are. There's something so captivating and inspiring about it.
I think one of my favorite vacations was Paris/London/different places around Germany. I got to experience a lot of things that some don't get to in a lifetime. I think traveling helps expand the mind and makes people less judgmental because they experience something different. And when you're immersed in another culture you try your best to work with it. If you never travel then you're always stuck doing the same thing and you don't know anything else. I also love all the trips I've taken to New York. Every single one of them.

Wow! Great post! I found your blog through a comment you made on "Soap and Chocolate". I've been practicing Iyengar yoga for about 9 years now and I dabble in macrobiotics and the vegetarian eating. I started cleaning up my eating habits while working on infertility issues. We now have a 9 year old daughter and two 7 month old twin boys - all from IF treatments, but the healthy lifestyle helps!
If I could go anywhere, I'd love to go to London and Barcelona. I love to travel, but I haven't had much opportunity to.
I'm so glad you are having a great time on vacation. I think it's awesome you pack up your necessities like vanilla stevia :) I'm addicted to that myself.
Mike and I cruise every year and they are all starting to run together...memories that is. I remember our honeymoon in Disney World and we got to be stage people at the Indiana Jones place. It was so fun!

Oh you better believe I like to travel. That bug has bitten me many a time. In fact, my "real job" may or may not have something to do with travel... ;) I think I'm done with living abroad (I've fully satisfied the pushing-myself-out-of-my-comfort-zone quota), but there's never a day when I don't think about some place I'm dying to visit. Egypt and South Africa are high on the list right now. :)

I love to travel, but right now trips are a bit difficult with the toddler. In July we went to Tahoe and the toddler got scared of the huge, beautiful bathroom and refused to take a bath/shower the entire time we were there... We are thinking about going to Europe to visit family in the summer though.

Those beach photos are awesome! Before I went back to grad school I was a big traveller, but can't seem to take too much time these days. As soon as I finish though, you can be sure I will be back to my travelling ways! That fresh fruit is making me want to go back to Central America, or anywhere, really!
Ok, I feel like i am on vacation with u guys. I love that! Skylar is a great tour guide! Between you and I we would make a great travel team. You bring the coffee maker, i'll bring the goodies mentioned in my Travel Essentials post (glad u liked it!)
Let's see.....where would I go? I love the mountains, so I would love to go to Switzerland and ski the Alps. I am also aching to visit the Himalayas via Nepal and Tibet. I could tie in India on that trip too! I love the Indian culture and would enjoy learning more about it first hand. I work with an Ayurvedic practitioner, she has taught me so much! Maybe one day we can do a foodie blogger/yoga group excursion.
Best of luck on your loooooonggg journey home. I know how painful that is, especially with kids. A friend of mine once said "Re-entry Sucks!" So true!

I have SO many places I want to travel, and then I looove returning to places I've already been. Like SD, and Jamaica and NY. But I'm also quite the little hermit too! I love having a home to go to (or a dorm room! we'll see how that goes.) and making it my own.
