We were honored when Averie asked us to do a guest post while she is away on vacation.
Here is a quick introduction of who we are.
We are the Pure2Raw Twins from www.pure2raw.com. We are two best friends who happen to be twin sisters. We both are high raw vegans who eat gluten free, peanut free, corn free, and soy free. Our blog is our journey through finding balance and good health through this ‘so called’ life as well owning own our business. Our bakery is called Twin Cakes Bakery, which is a gluten free, vegan, peanut free bakery, plus have our Pure2Raw product line. Pure2raw is where we love to share our passion for fitness, health, plus baking and unbaking away in the kitchen : ) We enjoy running and our newest passion is yoga. Averie has been very inspirational to us both!
Today we are going to share one of our favorite classics:
Mac-n-Cheese
Yep here is a never fail, 20 minute recipe that we hope it will become a staple in your kitchen. We know a lot of people (like us) that can’t eat this or that for whatever reason miss childhood classics, so here is our remake of one with a healthy twist!!Pure2raw Twins Recipe:
One Pot Gluten Free Vegan Mac-n-Cheese

Serves 2-3
Step 1:
- 2 cups water
- 1 cup quinoa
*There might be some water left over, but that is okay.
Remove from heat and pour the quinoa into a bowl and set aside.
Step 2: The cheezy sauce
- Ingredients:
- ¾ cup coconut milk
- 3 tbsp nutritional yeast
- 2 tbsp tahini
- 2 tbsp arrowroot
- 1 tsp lemon juice
- ½ tsp salt
- ¼ tsp garlic powder

And you done. : )
Have fun and add your favorite seasonings, we added a pinch of smoked paprika and 1 tsp parsley.
Enjoy!

Thank you again to Averie for letting us be a guest post ; ) We hope we have inspired you all to try something new. If you are really adventurous, you could try stirring in a nut butter (instead or in addition to the tahini), if you have an open mind the possibilities are endless!! Have fun in the kitchen : )
Thank you to all of Love, Veggies, and Yoga readers for allowing the twins into your lives, take care!
The Pure2Raw Twins,
Lori and Michelle

I didn't know those pretty ladies were guest posting, too. Good choice.
Love the quinoa mac and cheese. I definitely have to try that one. It is right up my alley. Quinoa is my favorite grain. Thanks girls.
Merry Christmas and happy Hanukkah (didn't want to forget your hubby; didn't you say you have a dual household? Pretty cool and very well-rounded).
I have a weakness for biscotti. Perhaps a raw sugar free version might be a splurge I can handle.
You're 5'11? Me too! My spider senses are tingling for some far off blogging/yoga meet up of tall yoginis.
OMG heaven yum! Quinoa mac & Cheese- what a genius idea! I wonder what the arrowroot is for- a thickener perhaps?? I bought some (it was on sale- DOH) and now I don't know what it's for. Silly me.
Oh my goodness! All their goodies look soo delicious and beautiful! Yet another blog I have yet to stumble upon. Aahh the bloggie world is so big. :)
I hate mac n' cheese, and seriously, that looks amazing. Tahini+coconut milk+nooch? Ahh yum. :)
Great guest post!
