Holiday Peppermint Chia Seed Pudding

How are you doing today?  Is everyone enjoying Full Moon Wednesday?  I think Full Moon Day is a vast improvement on Hump Day, what do you think?  If you missed my post on the Full Moon and how it effects us on everything from Insomnia to Romance to Difficulty Concentrating to a Great Time for a party, check it out!I'm glad most of you seemed to enjoy my little moon factoids & tidbits, and yes, blame your recent drama & insomnia on the moon!  And to new commenters and readers, thanks for coming out of the woodwork, I love that!  muah!!!!!

Moving right along with some tidbits about me...
Recently, one of the things that I've been thinking about doing is becoming a certified personal trainer.  I was drawn to that not because I truly want to train people day in day out, but because I think it would be a nice supplement to my yoga teacher credentials.  Rounding out and broadening my knowledge sort of thing.

However, after much soul searching, I think the personal training certification is on hold for a bit because I am pursing the next, and highest level, of yoga teacher certification which is the 500 hour level as recognized by Yoga Alliance!!!!!  I've been registered at the 200 hour level since 2001 and this is the next and only jump up, and I am thrilled to be doing it!


Today I met with my guru and mentor today, and many of the previous thousands of hours of yoga teaching that I've done, the hundreds of hours worth of yoga retreats and conferences that I've attended over the years, and my own personal self-inquiry into the practice, both meditative and asana, will be "counted" in some way.   I'm really excited because I am a life-long learner and hold everything from my California Real Estate license to my Certified Lactation Educator & Counselor credential.  Jack of all trades, I tell you.  And I love it.  My brain is always working; I need to feed it with new information and new things to devour, ponder, & study and for me, since yoga is my true passion and this is the perfect path.


But enough yoga talk, let's talk about Holiday Peppermint Chia Seed Pudding!

You may remember just a couple days ago I decided to make the Vegan Creme de Menthe bars which are a lovely combination of creme de menthe (i.e. minty flavor) and chocolate?
Well, I decided to make Holiday Chia Pudding with a wintery and minty flavor.

Averie's Holiday Peppermint Chia Seed Pudding
2 Tbsp Chia Seeds
1/2 c Nut Milk (I used TJ's lowfat vanilla almond milk) or milk of your choice
1/2 Tsp Peppermint Extract (Warning: Start slowly with this and do not overdo itPeppermint Extract is very potent stuff, nothing like vanilla extract, and a little bit of Peppermint Extract goes a long way)
1-2 Tbsp Agave (or to taste) and/or Stevia to taste
 Combine all the ingredients in a bowl and stir

Let it sit out for 20-30 minutes, stirring once or twice
This is after 15-20 minutes
This is after 12 hours in the fridge.  You can refrigerate the pudding for up to 2 days.
Note that the pudding will continue to thicken as time elapses.  The little seeds will soak up every drop of the liquid and will expand, thus thickening the pudding.
I realize it does look a little space age, but chia seeds are a great source of Omega 3's, healthy fat, protein, and fiber.  They're magical little things!

In addition to some Peppermint Pudding, I broke into a Vega bar.  
Skylar's comment:  Good gwah-NOLE-ah (granola) bar, Mommy!  She has sampled dozens of varieties of raw bars, granola bars, flax seed crackers, you name it, she's tried things right along with me.  
And she gave this bar the Two Year Old Two Chubby Thumbs Up stamp of approval.
So did I.  The berry flavor shines right through which was nice as does the date flavor.

I cleaned a pineapple.  We go through about 2 a week but they're pretty acidic so gotta be careful not to get too pina-liscious carried away.
Also dehydrated some banana slices.

The house smells absolutely divine with the fragrant fumes of roasting bananas.  It's like banana bread on steroids wafting through your house.  I actually ran errands on purpose because they smell Too Good!

For dinner I made a kale salad with tomatoes, brock, cukes, and my Homemade Vegan Slaw Dressing.
For Dessert, what else, but some Holiday Peppermint Chia Seed Pudding!

And I also had some Raw Vegan Chocolate Chip Cookie Dough Balls that were calling my name.

I never tire of these little balls! (twss) .  They taste just like real raw chocolate chip cookie dough and they're vegan, gluten & soy-free, and they're ready in 10 minutes or less!

I had a great surprise in the mail today!!  A lovely care package of homemade goodies from the lovely Bekah of Beek Eats
Coconut Chia Granola, Cinnamon-Cumin-Maple Almonds, and Pumpkin Chocolate Chip Cookies.

Everything is fabulous and Bekah's a great cook & an even better friend, love ya sweetie!  Thank you!!!! 

Yoga Today is Seated forward bending in Paschimottanasana.  If you're a runner especially, you really need to think about stretching your hamstrings in a seated forward bend or standing forward bend where you'd fold over at the waist and touch your toes.  Running shortens your hamstrings, and forward bends will counter that and helps to lengthen them back out.  And doing so will help you prevent injuries. 

For the non runners, this pose also helps to stretch and release your lower back and since we all spend too much time sitting at our 'puters and not doin' our backs any favors, forward bends will help your back out, too.

Tip of the Day: Being Green Around the House

  • Make Your Own Detergent: Stop dumping polluting chemicals down the drain.  A simple, cost-effective dish detergent can be made for your handwashing or for your dishwasher.  Check out these recipes:
Liquid Dish Soap: 
  • 2 cups liquid castile soap
  • ½ cup water
  • ½ cup white vinegar
  • 1 tp. lemon juice
  • 3 drops tea tree oil
  • Shake well before use.  Use 2 tablespoons per load.
Dish Powder:  
Mix equal parts borax and baking soda.  Use 2 tablespoons per load.  Warning: May scratch dishware.

The full moon stuff is so interesting! Yum pudding I haven't had any in forever! Wow that is pretty cool about the yoga hours! I am just getting into yoga and I LOVE it. I feel it has improved my running more then anything!

I think you've gotten me on a peppermint thing, because I had to pick up a chocolate peppermint Luna today even though I generally dislike Lunas. I'll be sure to be using some peppermint extract when I go home next time for baking(or probably anise but the flavors are so similar to me).

I totally think there's something to this full moon business. My mom used to work in the psychiatric ward at the hospital and she said her patients would completely change during the full moon.

And YAY for movin' on up in yoga!!!! I can totally see how that would be the next logical step for you. And like you inferred, life is long and you'll always have a chance to do the PT thing. I totally want to go to one of your classes :)

Being that yoga has become such a large and wonderful part of your life, it only makes sense. :) Haha, you remind me so much of myself... I always need to have my brain moving and need a little bit of everything in my life. I honestly have considered Real Estate myself at one point! Good to know I'm not alone in my drive for knowledge!

I don't know if you are still rocking the banana softserve but today I added cocoa powder and almond extract with a teeny squirt of agave to the pure bananas and it was so good I had to tell someone!!

I just love your desserts that you make! I am transitioning into a high raw (eventually fully raw someday) vegan diet from a vegan diet. I can't wait to start feeling great and hopefully my digestive problems will clear up.

But, I see that you like to experiment with different raw desserts, so I was wondering if you would like to take on the task of inventing a raw vegan carrot cake? Wouldn't that be awesome!? I just love carrot cake and would be delighted if there was an easy-to-make vegan version. :)

First of all, I am still drooling over those creme de menthe bars. Second of all, I NEED to get some chia seeds to make your pudding recipe!

As for those yoga pose, I can actually do that one! When I first started to do yoga I could barely touch my toes, now I can grab onto the bottoms of my feet a little. I hope to be able to be as flexible as you one day!

I'm so excited for you! And so glad that some of your other "work" will also count. It should!

I, too, am a lifelong learner which is why I'm starting the Sustainable Business program in Jan. Working a full-time job (at my pay) really isn't enough, and I know I can do more. I'm not sure my husband always understands my need for more...when he's had a full day of plenty, enough, or as much as he can handle. That's our lesson to learn right now!

Can't wait to hear more about your training!

im thinking chocolate orange chia pudding would be insane in the membrane. I may conjur some up.. just wait, just wait ;)

Congrats on pursuing the 500 hr yoga certification! That's incredible - heck you are incredible! Being a life long learner, I believe, leads to a life filled with more happiness. The second someone thinks they know it all.. they've lost it all. Life is a journey and why not get as much out of it as possible? Great people are well-rounded :)

i am running low on my chia seeds! where do you order yours? i need to get more ASAP! i cant go a day with them in my oats!! love the idea of peppermint chia pudding, so festive and delicious. you are so right about the peppermint extract! i once used a tiny bit in my water to give it some flavor and the pepperminty taste would NOT leave my bottle for dayssss BUT it tasted so great!

cognrats on the yoga cert! that is so amazing, and so right up your alley, i think this is a great idea to persure the yoga cert, rather then rush into the PT certification..that will always be there and you can always get that in the future!

Hey girl :) Can I just tell you- I love reading your comments. You are so so so sweet! I get my artichokes packed in water and they are low sodium. They're some random random brand! Then I just toss them in a hint of olive oil and spices. Perfection!

I think its fabulous that you're going for the next level of yoga cert! You must do what you love!

LOVE LOVE the green cleaning tips. I use a lot of these. I am trying to get as many of the fake cleaning products out of my house as possible. I use soap and water only in the kitchen, soap, lemon, water on my tile floors and vinegar and water on my wood floors. Makes me happy :) And smells fantastic

YUM! That chia pudding looks so tasty.
I made your chocolate chia recipe but subbed in carob instead (so I used less agave because carob is naturally sweet) and put in rose water for a flowery, fragrant taste. It was fabulous (though I put in a bit too much rose water, my mom gobbled it up...she loves the stuff).
anyway I will have to try the latest :)

The chis seed pudding looks interesting and I keep meaning to try it. I'm sure it would be better than the plain sludge I drink down : )

Good ideas for washing solution. I must try them! Mostly because I'm cheap and would love to save money but with the added bonus of not using chemicals excessively. I currently use Costco's environmentally safe laundry detergent. I LOVE the smell :)

Yummy! I love peppermint, esp around the holidays. It always reminds me of Christmas for some reason. Nice and refreshing. Great idea!

The detergent is awesome. Ive been trying to buy more natural products but even better to make your own! Thanks for that recipe.
That stretch seems so great. I sit at a computer all day at work so anything that helps my lower back is fantastic!! Do you have any suggestions for some good positions for cyclists?

There are so many great ideas in this post! I can't wait to try them. I'm not sure about the holiday peppermint pudding because I don't really care for chocolate and peppermint together (I know I'm a freak:). The chocolate chia cookie bar is definitely going to have to be made asap, though!!

I'm slowly moving to a higher raw foods diet and you have some incredible (& easy) looking recipes! And I super love the yoga move at the end of each post! I love mint! I like to throw it into smoothies, into veggie wraps/rolls, is super good in paired with fruit. It makes a lovely shade of green for raw mint ice cream. We even found a huge patch of it growing wild by our favorite creek last weekend. I loved sitting by it and soaking in the fragrance.

I LOVE mint! I love growing it too and picking it fresh from my planter! It makes the best mint tea! I loved being reminded of the holiday chia seed pudding..yumm! I hope that I can handle the texture because it sounds soo delish!
