Vegan Gluten-Free Pancakes

How was the weekend?  What were you up to?  Hopefully you had lots of time to do whatever it was that you wanted to do...cooking, reading, spending time with your friends 'n fam, whatever it was, I hope your weekend rejuvenated you because Monday Morning is just around the corner.  On Saturday I did yoga as mentioned, and Sunday I went to yoga. 

An interesting thing happened today that hasn't happened to me in years in a yoga class.  I was surrounded by all men.  3 in front of me, one on each side, and two behind me.  I have to say I kinda liked it, til they all started sweating profusely all over the floor in the hot power yoga class!  And there were points that I had to chuckle because I think testosterone and competition was getting the better of them as they all began to add push-ups in chaturunga between sun salutations.  First, one guy threw in a pushup, then another guy followed him, then another guy threw in about 3 pushups, and this continued and ramped up.  I think they thought they were impressing me.  Until I impressed them with some of my lift-off and hovering manuevers.  haha!  Seriously though, Yoga is not about competition Relax, guys!

But, enough recapping, it's a new week, and time for a new recipe!  And what better thing to make on a weekend morning than pancakes!

I admit, I have previously been very intimated by pancakes, because when you remove eggs (and egg-replacer because I think it tastes a little funky) AND you remove gluten-containing flours, I have always been super worried about the Lack of Fluffage.  I know Susan and Deb don't have these issues.  Nor does April And, I know Heather has made pancakes with coconut flour, and although awesomely wonderful looking, they have egg whites which I am intolerant (allergic) to eggs, which goes hand-in-hand with the high raw vegan-chose-me thing.  

And then I wanted to try a twist on Brownie Batter Pancakes but as I mentioned this in this postCarbzilla, sent me something I am too cheap to buy myself have been wanting for a long time and she wasn't going to use this herself, so she passed it onto me:  Coconut Flour.
And it's kinda been burning a hold in my pocket cupboard.

And recently, my local friend & Pancake Expert, Madeline, and I were talking about pancakes and she was gracious enough to make a double batch of pancakes; one batch with and one batch without baking powder and baking soda.  In the end, it didn't seem to matter much whether baking powder/soda were used, or not.  Cool and thank you again, Madeline, for doing that experiment!


So after all that vacillating, determining, deciding, and debating about what I was going to do to make pancakes that would work for me, I finally created my own Pancake Recipe!

Averie's Vegan Gluten-Free Pancakes
Yields 5 palm-sized pancakes or 10 silver dollar-sized pancakes

Ingredients & Directions
1 banana
1 small apple (or 1/4 c applesauce)

1 Tbsp Flax Seeds
1/4 c of nut milk (I used TJ's lowfat vanilla almond milk)
Blend first 4 ingredients in Vita, Food Proc, or By Hand.   Let this sit for 10 mins or so while you're getting the rest of the ingredients together.  It will give the flax seeds time to gel, thereby producing an egg-like effect.  The apple & banana help with this, too



Then add:
2 Tbsp Coconut Flour (or the flour of your liking; wheat, pastry, almond, rice, etc.)
1/3 c dry oats



Optional Add-In's (and I used them all with one exception, noted):
1/4 Tsp Baking Soda 
1/4 Tsp Baking Powder (If you need Gluten Free, try This or This) --I only used Baking Soda, not Baking Powder, too.  I really don't think it matters all that much, but experiment and let me know.
Pinch Cinnamon (and/or nutmeg)

Dash Vanilla Extract
2 Tbsp Coconut Oil (or another oil; grapeseed, canola, etc.)
1/4 c more water or nut milk only if the batter looks too dry/thick.  Mine was, so this was necessary.  The flax, oats, banana & apple were making things nice and thick.

Fry Up the Pancakes, about 4 minutes on the first side, about 3 minutes on the 2nd side

I used 2 Tbsp Coconut Oil to fry with



Flipped Over
and added 2 more Tbsp Coconut Oil

It was gettin' hot 'n steamy!


And then I plated them up


With Fresh Blueberries, Real Maple Syrup, and Vegan Butter

I saved a couple for later

Later came in like 20 minutesSkylar wanted more!

And after breakfast, I felt great!  I was not sluggish nor carb-coma sleepyNor did I have that ohmygod, I am stuffed to the gills with heavy lead-bullets in my belly!  So, I will definitely be repeating this recipe, soon!

In addition to the carb-fest, we also had Fruit: Mangos, Grapefruit, & Pineapple

And more carbs for Scott!
1/3 c dry oats, 2/3 c water, with cinnamon, brown sugar, and Katie's Recipe for Banana Brulee stirred into the oats


And Garnished with half a banana and raisins

No day would be complete for me without lots of greenery, though.  This was a Mixed Greens, Sugar Snap Peas, Carrots, Yellow Pepper, Cuke, and Tomato Salad

With my Creamy Tahini Cesar-Inspired Dressing

This one was Romaine & Mixed Greens, Cukes, Tomatoes, Sugar Snap Peas, Carrots, Tomatoes, Brock, and Brussles.

With homemade Vegan Slaw Dressing

And I polished off another Vegan Peanut Butter Chocolate Chip Protein Bar For Dessert

What's your favorite pancake recipe? Why?  What's your take on the Baking Powder vs. Baking Soda vs. Not Using Either?  I'd love to hear your thoughts!

If you have no dietary restrictions, would you ever consider making gluten-free pancakes, or making other gluten-free foods, because you may not know it, but wheat and gluten in general are quite inflammatory to the body.  Meaning, the body has to work extra hard and compensate in order to digest foods that are, by nature, inflammatory and more difficult to digest.  Do you have any food allergies or intolerances?  I do; gluten, dairy, and soy, to varying degrees, fish, shellfish, and even chicken, I know crazy!  If you missed this post, I give the run-down on my experiences.  Do you ever suspect that you have any food allergies or intolerances?  Do some foods just make you feel kinda blech after you eat them?  Which foods?


And on lighter matters, do you remember any of your childhood birthday parties?  

Someone in my house is turning 3 in two weeks and I stocked up on pink decorations. 


I still haven't formally planned anything yet!  We also have zero family members in this state nor have we been here long enough to have made tons of 3-year-old friends, either.

Awww...love that pink birthday gear!

When I was Skylar's age, I had a teddy-bear themed party where everyone brought their favorite bear (or stuffed animal). That seems like of lame compared to the crazy parties some kids have today...but I liked it!

That story about the guys doing pushups CRACKS me up...men-- gotta love 'em!

Mmmmm, pancakes! I miss them so badly! I love the Arrowhead Mills Whole Grain pancakes. I used to eat them all the time with Earth Balance and maple syrup. It's a wonder I was a chubby bunny : )

My "baby" just turned 5 on Friday. It's tough when you're youngest isn't so young anymore : ( I have yet to do a party for any of my kids. I know it sounds mean but we just have family over for cake and ice cream. I can hardly keep track of my own kids so I don't need to add more, ha ha! I remember when I turned 13 my mom and dad brought my favorite foods down to the beach for a birthday "party". That's the only one that sticks out in my mind. It was fun!

The pancakes look great! I'm gluten intolerant, and in the middle of an elimination diet to figure out what else I'm sensitive to. Sometimes it seems like my body reacts to everything!

I've never bvaked gluten free, but I have heard that is inflammatory. I might try it some day (starting with your delish pancakes). I'm allergic to shellfish and I HATE tomatoes, but other than that I don't avoid too many whole foods.
Try inviting the kids on the block for Skylar's party. One of my best friends when I was little did this when she had a biorthday just a few weeks after moving.

the pancakes? to die for! it's been ages since ive had a good pancake breakfast. i am such a slacker and always make oats.. the easy way out. but pancakes are like heaven! i love that you were able to make up a recipe sans eggs. you are SO crafty.

ah those pancakes sound so good! i am intimidated by pancakes too haha i feel like whenever i make them they never turn out good enough. and that is so funny about the boys in yoga .... boys are so smelly & competitive!!

aww i love little kid birthday parties! My mom bought in pets from the zoo and it was soo fun! If you have a birthday party, you should video tape it because i always look back and watch them & it is so fun!

I have a ton, ton of vegan cookbooks that all start with pancake recipes. Honestly, I never make em! Its just one food that I do not crave (and I love carbs). I really enjoy your version, though, and think I might have to try em out!!

I totally remember my childhood parties.. I was a Christmas baby, though so it was tough to get kiddos together. I cant wait to see what you plan for Miss Skylar! Just decorate your house as a pink palace! :)

and yeah, i do think about going gluten free in terms of the inflammatory issue. sometimes i feel weird with weird grains in my belly. =D i hope skylar has an awesome b day!

ah I love when men are secure enough with themselves to go to a yoga class! at my school the basketball coach makes it MANDATORY for the players to go to at least one class a week and it's great. They really immerse themselves in the practice - though i'm not gonna lie, it's a bit of a distraction for moi ;)

Salads looks amazing as usual!! But those pancakes really caught my eye- I have some coconut flour that someone passed on to me as well, and this looks like a great way to use some of it!! I LOVE coconut :) Hmm.. I don't remember my third birthday, but I think we usually just had home parties, or went to the discovery zone, Chucky Cheeses... you know the usual! Just add candy, brownies (since I hate cake) balloons and gifts and she will be one happy kiddo! Happy birthday Miss Skylar!

You know I love it Averie. I often do gluten free pancakes. No gluten problems here, but I agree with you - I think it does cause inflammation in most people which is never a good things. My favorite pancake recipe? Too many to choose from!

As far as baking soda/baking powder goes, one of my readers emailed me with the following info:

Hey Heather--I've noticed that in a lot of your pancake and bread recipes, you use both baking powder and baking soda. Is there a reason? I ask because although both are leaveners, only baking powder will actually work in some of your recipes. Baking soda needs to react with an acidic ingredient (like buttermilk, honey, coffee, brown sugar, lemon juice, etc.) in order to create carbon dioxide, whereas baking powder only needs liquid and heat to leaven. Baking soda can also impart a soapy taste to food--I don't find it unpleasant if it's just a little, but some people do. I don't see acids in most of your recipes, so if you're not happy with how they're turning out, you can always try leaving out the baking soda.

Sorry, long comment, but just so you know, the baking soda isn't really necessary in any of my pancake recipes, and so I stopped using it.

I used to make cooked pancakes a lot but they had soy in them. probably why they caused me a lot of inflammation. but we used apple and it gave it a nice moist consistency.

happy birthday to skylar! i like the idea of a teddy bear picnic party. if she likes that kind of thing. i'd ask her what she wants to do.

Glad you could put the flour to good use. I swear it could soak up the Pacific Ocean if you put a cup of it in there. I'm guessing your batter plunked more than poured. They look phenomenal though!

Good info about Baking Soda from Heabs - guess I'll just leave the soda to soak up odors instead (I always have two boxes - one for cooking, one for odors/cleaning).

I can't believe Skylar's not even 3 yet! She seems so grown up!

Wow - these sound amazing! Especially now that I'm giving gluten-free a try!
And I use Trader Joe's 100% Stevia Extract. I actually don't use stevia all that often, but it's a nice when I want just a touch of sweetness. I've never tried NuNaturals, but I love the idea of flavors like vanilla.

P.S.: Thanks for the sweet comment. I'm hopeful that my medical problems are related to a gluten intolerance, but even if that ends up not being the case, I think it'll be better for my overall health to not put difficult to digest food into my system. Re: birthdays

Hmmm... I remember one time when I was a kid, mom and dad blind-folded me and drove me around and around (so I'd think they drove me a long ways) and then they stopped the car, helped me out, and led me to the party and took the blindfold off - which was at a park under a pavilion and all my friends and a bunch of my family was there. That is a birthday that really stands out in my mind. I got a bike I'd really been wanting - a banana bike. Remember those?! LOL It was purple and white. :-D

Your daughter is beautiful, just like her mommy! I've been meaning to tell you that!

Excellent recipe! I used to make the easiest, most basic vegan pancakes - 1 cup flour, 1 cup "milk", 1 tsp baking powder, 1/2 tsp salt, 1 T honey, 1 T oil. That's it. I haven't tried it (yet) with gluten free flour.

But I did post a gluten free cookie recipe today! I bet you could tweak them to make them into your infamous balls!

Food allergies...I am experimenting right now. No soy, gluten or dairy. I feel your pain. good thing I love veggies!

vegan pancakes! i had pancakes this morning but they weren't vegan or GF, and they weren't as pretty as yours! love that banana loaf, adding sliced bananas to the top really gives it that something extra. i know i've said it before but i'll say it again: your daughter is so cute! totally gorgeous like her mama!

I react to chicken, fish and eggs too :( All gastro symptoms..accompanied by fatigue! But funny thing is that I don't react to tuna. I've been doing some researching and tuna has a low omega-3 count compared to other fish. I have all the signs of omega-3 fatty acid deficiency.. and when you have a deficiency in something it creates reactions when you start eating it again.
I can eat red meat fine, and am going to start introducing egg yolks little at a time.

I had a teddy bear party when I was Skylar's age. Mum made a huge teddy bear cake, and we all had our favourite teddies with us :) I was a teddy bear kinda girl!

Once again, I'm sorry I've gotten so behind on reading your blog. All last week I felt sick (and still don't feel completely well) and looking at food isn't helping. However, I WILL say that those pancakes look incredible and even though I don't have any gluten intolerances I would definitely make them. They look really easy, too! Do the apples blend pretty well in the Vita-mix?

I don't think I have any allergies or intolerances to food - nothing (knock on wood) bothers me unless I eat too much of it. I still try not to go overboard on dairy though.

Happy early Birthday to little Averie! I just remember loving to play games when I was really little at all my birthday parties. The cheesy ones like musical chairs, pass the parcel, pin the tail on the donkey, etc. Old school - I know. :)

you must know I have been playing with recipes for a while. lately I backed off and just made my guys normal ones but I always love to experiment. YES I would make gluten free ones...No I do not have any food intolerences but that does NOT mean I have to eat white flour and mrs buttersworth ones.

I am currently trying to lessen my sugar consumption and pancakes are simply just a reason to down sugar! haha

I made some yesterday too and I had 2. I always just have 2. but I pile mine with all sorts of fun things like fruit and nuts .

I have not used the flax egg replacement yet, but am going to try. I actually have been eating more eggs lately.

my whole low iron thing freaked me out and I have been takeing a few steps back lately. But I am ready to get back to my smoothies and raw veggies and the like.

A couple of my favorite activities from my childhood BD parties were a scavenger hunt my Mom made around our house and outside (we lived in a woods) and tie dying our own t-shirts.
Also, great ideas for using up ripe ol bananas, I know our freezer is full of them ;)

I don't have any food allergies and I have never been diagnosed with having any intolerances either, but I don't eat wheat or gluten (or any other grains) on a daily basis because they aren't the most healthy things to eat to begin with!

I LOVE coconut flour pancakes. Buckwheat pancakes are also really good. I have done almond meal pancakes too but they are a little too rich for my taste.

You had mentioned to let you know if I tried a recipe of yours and recreated my own inspiration to let you know :) I adored the cheesecakea and had to toss in the raspberries and extra dark cocoa powder...oh and some dark chocolate chips as well! It was pretty good. I have been better this time at staying out of the freezer :)

I am trying to figure out my food allergies and sesitivities. I would make gluten free pancakes for sure, especially your recipe :) I have always liked the heartiness of buckwheat.

Aw, Abby Cadabby is a cute character. She wasn't around during my Sesame St.-watching days, but I went to a 40th anniversary event recently and sat right behind the puppeteer/voice of Abby! She's very cute herself. :)

Looks like a great pancake formula! I like how they're nice and thick and sorta bulky looking--that sounded weird but I prefer that style over really thin pancakes, which so many vegan ones are! Lindsay of Happy Herbivore has mastered the vegan pancake quite well so I know I can always turn to her for a good standard-tasting recipe.

Your pancakes look great. I don't make pancakes very often (more like never), but the teenager makes some once in a while. And to answer your question if I would ever make anything gluten free even though I'm not allergic, yes, totally. I know that gluten is hard to digest, and I'm actually trying to reduce my gluten intake. I know I should eliminate it completely for a while to see if it does have something to do with some of my health issues (or if they are strictly related to the gallstones). Anyway, sounds like a great recipe!

Your "baby" is turning 3!!! Isn't it crazy how quickly time goes by when you have kids?!!!??? I know you'll make her day super special! :)

Those have got to be some of the most creative pancakes I've ever seen!! I love the apple idea! And thanks for the shout out :D I've been using the same recipe forever - 1/2 cup oats, 1/2 cup egg whites, 1/2 cup cottage cheese. I like it cause it's got lots of protein, thus no carb-coma ;)

My food intolerance are really odd. I've had all the usual tests done, and there seems to be no rhyme or reason to it. Raw pineapple, spinach, broccoli, cauliflower, among others, will make me physically ill. High fat foods digest really badly too - including olive/canola oil and avocadoes. Thankfully, nuts are okay on my tummy, so I rely on those and eggs for my fats :)

Banana Pancakes are a common weekend breakfast around our house - my husband is a pro at it. I would be really interested in finding out more about making pancakes, cookies and other baked goods with out either baking soda or baking powder. My body does way better without the leavening.
I am very intollerant of a lot of chemicals and so have to eat a very pure organic, no additive diet. Yeast makes me very sick and I'm not able to digest meat (except some fish and shellfish) without a great deal of pain and misery. Thankfully my body stops there - but I'm cautious to not eat too much of any one thing that tends to be a common food intolerance just to keep my body from getting any other ideas.

One of my nephew's bithday is close to halloween and they have always thrown costume parties for him. That sort of thing would work just as well at any other time of the year and what little (or big for that matter) girl doesn't like some sort of dressup party!

I remember once upon a time being able to do scale pose - and I look forward to the day my body can find it again!

Those pancakes look AWESOME. I made your peanut butter chocolate chip protein bars last nite. They are so good it's INSANE. I could eat them all at once if I let myself. I also have the chocolate protein oats in the fridge for the morning (gonna freeze before bed) and can't wait! Keep the awesome recipes coming!

As for me, I'm still trying to figure out my intolerances. I know I'm allergic to egg whites, but I still eat them once a week or so. They do give me a stomachache quite often, but it usually goes away very fast and it's not too bad. I know I shouldn't eat them though. I'm also very yeast sensitive, so I try to be careful with that, sometimes more than others. And I'm currently undecided if I'm gluten interolant or not. Been playing around with that one. I think I may be more sensitive to it than actually intolerant if that makes sense. Especially because of the inflammation that you mentioned. When I stop eating it I don't feel any different, but when I eat too much I notice I do feel crappy. Pretty interesting stuff.

Yes, I would try gluten free pancakes. Yes, I would venture into the world of Raw Vegan food. The bottom line with me is I LOVE TO EAT!! I do need to carefully watch my carb & sugar intake. Too much and I am sluggish and a bit depressed. Heavy carbs bloat me and make me feel puffy. Just not a good fit. Not sure if I have any food allergies, but like I stated above some overall intolerances. I run best on veggies, lean protein and healthy fat.
Coconut products: This past year I have jumped on the coconut train. Gosh you are right, the good stuff is so expensive...too expensive. I just indulged and bought a bottle of "Artisana Organic Bliss" raw coconut butter with superfoods. WOW & YUM! I had it on some oatmeal as my healthy fat. Do you like it?
I would love to learn more from u about coconut, why it is good for us even though it has so much saturated fat. I notice you use it quite a bit from flour to oil etc...

I do not recall my b'day parties...but I love celebrating my kids b'days! We pick a theme (simple) and enjoy the moment. Some parties have been bigger others just our family of 4. As long as there are treats, love and laughter all is good in party land. Oh, pink is greta too!

Late to the party, Averie, but my do those pancakes look delish. Perfect timing--I've been bumping back the gluten in my diet, and feeling good from this adjustment. Btw, Betcha that batter would work in a waffle iron, too. Hmmmm.

Had a good LOL at the men getting all competitive in Yoga. I've been surrounded by that energy at times too. It's so funny.

As for food sensitivities-- I don't do so great with dairy. For years I had no idea, as it doesn't cause me stomach upset. But it does seem to encourage my skin to break out, so I've cut back on it 99%. Wasn't as difficult of a transition as I thought. I also have cut way back on soy.

I am totally making those pancakes tomorrow...for dinner! I am a breakfast for dinner kinda gal! (or for dessert tonight because they look so freakin' decadent!) I normally just make mine with oatmeal, dairy free milk, baking powder and egg sub. I love them, but yours definitely take is up a notch! I, personally, have horrible lactose intolerance (with a milk allergy) and a soy allergy (and I chose to be vegetarian). My husband was recently diagnosed with celiac (I am due to be tested for that as well, since it runs in my family too). I mostly bake gluten free and have discovered that I prefer gluten free to gluten! Our kids are not restricted, but they mostly do the gluten free thing and dairy free when I make the stuff (which is most of the time).

Thanks for the recipe and by the way, your little girl is too adorable! Love that smile!

My favorite pancakes are whole wheat blueberry and chocolate chip(might need to rethink this since I found I have a slight wheat/gluten intolerance. Maybe I'll just have the bloobs/choc. chips plain)
