Highlights of the Week & Quick Almond Milk Recipe

How's your weekend going?  Mine has been going well and I love the productive feeling I have when I am crossing things off my to-do-list, left and right.  That term, lazy weekend morning?  That doesn't happen so much 'round here and that's fine by me.  I love handing Skylar off for a few hours with Scott and I go do yoga, and then run errands at warp speed without having to utter the phrases, "honey, please don't touch anything" and "we look with our eyes, not our hands" a hundred times.  Makes the shopping experience a little easier and faster, no doubt.  What have you been up to?  Cooking or strategizing what you're going to cook for the Big Game tomorrow?  Any plans?  As I've mentioned, I am laying low, doing nothing, and am thrilled about it!   Thanks to everyone who's left recipe links in the comment fields about what you're making....great ideas!

Tip of the Day:
Quick Almond Milk Recipe
This recipe is a quick solution when you need almond milk for a recipe, but realize you're out or don't want to open a whole new container of it.

1-2 tablespoons (raw) almond butter.  
1 cup water

In blender, combine almond butter with water. Blend until smooth. 

Refrigerate. Use within 1 day.

Yields 1 cup.
Optional tweak: peanut butter, cashew butter, or any other nut butter you enjoy can be used to make the nut milk.   Obviously recognize you're going to end up with peanut butter flavored milk or cashew butter flavored milk, etc. if you don't use almond butter.  Which is probably a good thing for some people.

What's A Kitchen or Cooking Shortcut you use or have learned about recently?  Mine is the nut milk trick out of nut butter and I also have determined that "old fashioned oats" cook well enough to my and Scott's liking in the microwave.  No need to buy instant, ever.  Nor break down and cook them on the stovetop if you're pressed for time and must use the micro.  As with anything, your mileage and preferences may vary.  But tell me about your tips and tricks up your sleeve!

Great quick recipe for nutmilk! I was actually thinking of making a big batch the old fashioned way sometime soon just as something to do on a rainy day(still clear skies here).
It's so true about oats. You don't need to process them too much for them to be microwavable. I don't know why they need to grind them into a powder and take away all the nutrition.
My "smart shortcut" recently was using sunflower and flax seeds in raw brownies instead of hemp. Obviously, hemp seeds are magical and delicious. But they also sore in price compared to the other two, and it will still turn out just as chocolatey so long as you use enough cocoa powder

You had such a delicious week Averie! My brother and I are currently taking a break from the cold NY weather to watch a bad movie and let him get some work done! I don't have any brilliant shortcuts other than cooking things ahead of time! I really try to plan my meals earlier in the week and prep as much of it as possible on days when I get home early or on days off so I can just toss everything together easy peasy when the time comes!

I still drool EVERY time I see those PB cups! I've always wanted to try making my own almond milk...can't get enough of the stuff :) I've actually learned to cook oats on the stove, instead of the microwave...I've found it's essential for steel-cut!

I love old fashioned oats in the microwave. Have always used milk, not water. Add in dried fruits (raisins or crasins) maybe mushy banana, cinnamon, and walnuts. So good, I don't need sweeteners.

I've been cooking old fashioned oats in the microwave for years. I recently bought a small amount of the "quick cooking" oats for Ava,(thought the smaller pieces would work better for a 6 mos old) and honestly those take the same time in the micro as the old fashioned.

My only other quick tip is to "steam" veggies in the micro. Fresh or frozen I just put em in a bowl and cover it with a plate and zap em. Much easier and doesn't dirty a pan.

Tropical Traditions coconut oil...it's not called "Gold Label" for nuthin'. That stuff is da bomb! Seriously, I can't use any other brand now. I'm totally spoiled. Nothing else compares.

Okay, here's what I'm making for Super Bowl Sunday: Penni's Rawkin' Chili. Raw, vegan, gluten-free, and oh-so good!

I never cook my old fashioned oats on the stove. They taste just as good cooked in the micro, and why would I want to do more dishes than I have to? :D

I love almond milk so I might give this recipe a try. I never thought I could give up regular milk but now I can't imagine drinking it again!

All of your recipes look so delicious. I can't wait to have 5 minutes of peace and quiet to give some of these a try.

We aren't football fans so I doubt we'll be watching the Super Bowl. I'm sure we'll be driving around just enjoying the traffic free afternoon. :)

Love the party pics. Skylar is gorgeous as usual. No real superbowl plans. Its funny cause around this time all the news shows have cooking people on with the "tips for superbowl party day" etc...every year the same :)
i dont understand football actually.. :)
A while back i always bought these pb reeses cups that had pb on the OUTSIDE and chocolate on the inside (reverse of the original)...dont see those much any more...cool stuff though :)

I just picked up some coconut oil the other day and am loving it so far. Speaking of coconut, I need to try your chocolate coconut snowballs. They look so yummy! Nom nom nom.

Let's see, cooking shortcuts. I frequently use the microwave to lightly steam veggies. I just place em in a few inches of water in a bowl and cover with a paper towel. They always come out perfectly.

I have been making almond milk but never thought about using almond butter. that sounds intriguing.

shortcuts? I have been cooking in batches. So every other day I have lunch made and dinner making night off. I was raised in a big family and never learned how to cook for less. Also I juice enough for an army once or twice a week. Then I drink up the juice in a couple days. Dishes are my biggest time consumers these days! haha

I love the idea for getting a quick milk!

My superbowl plans include being productive as I flit in and out of paying attention to the game. It will be on at Irish's request, but I'll be doing other things unless summoned to watch a segment.

I just learned with my soup that you can have a big basic batch and try different tweak recipes to avoid getting bored with the same thing for several days straight. My other big cooking trick is that almost everything will taste good if you throw a bunch of tasty spices at it.

The Apple-Carrot (Pan)cakes turned out alright made with the almond meal. I dehyrdated them too long though, so they are kind of like crunchy cookies. I stuck them in the fridge to soften up and I have used them as a crumbly topping for banana softserve so far. Tomorrow I think I am going to make some sort of breakfast granola bowl with them and some chopped banana, nut butter, and more! :) I will give the recipe another go (this time with almond meal) and tell you how it turns out. ;)

It's actually been quite the lazy weekend for me filled with lazy weekend mornings...but it also snowed all day yesterday, so I'm thinking that's justifiable. Friday I did a couple hours of yoga...those mornings are the best. The yoga and vegan retreat sounds wonderful! And as always, your eats look great, especially all the chocolate peanut butter cup creations you make!

Fabulous Post. I really enjoyed the recipe for the roasted veggies...Coconut and ginger sounds like a rockin combo! I also love the flax seed cookie recipe. I have a huge bag full that I need to work on using up because I usually just sprinkle some on my oats or yogurt.

So I woke up this morning all excited to make some flapjacks, right and NO rice, almond, hemp, milk to be found. The last of it was used (without notifying me) in a smoothie last night......eeeekkk.

I love home-made nutmilk! so easy and delicious!
I basically don't eat instant oatmeal unless it's all that's available - if you soak oats the night before, it's easy to just pop them in the microwave!
