Vegan Fudge

Happy Superbowl Sunday to all the Football Fans!  And Happy Superbowl Sunday to all you non-fans because this just means that places like grocery stores and parks are less crowded.  Or, if you're planning on making an escape to the mall while the football fans are crowded 'round the tv set, the mall will probably be nice and mellow and you can shop in peace!   I may or may not wish I was doing this. 

Seriously though, I've had a nice day and weekend.  I went to a wonderful hot power yoga class today, got my teacher training groove on Saturday morning because I'm pursing the highest level of yoga certification and today, Sunday, I've hung out with Skylar, and we're going to have a girls-only dinner before Scott makes his way back from the sports bar just in time to play Barbies with us.  haha!

But since it's a new week, it's time for a new recipe:  Vegan Fudge

The Recipe is Inspired by Hannah Kaminsky, author of My Sweet Vegan which I previously reviewed here
 And Alisa of One Frugal Foodie, author of, Go Dairy Free which I reviewed here and she has much of the fudge recipe on her website, Go Dairy Free.org

Vegan Fudge--Soy, Tree Nut, & Gluten Free; and a 10 Minute Recipe
Ingredients & Directions
  • 1 Cup Vegan/Semi-Sweet Chocolate Chips (such as Enjoy Life brand or see This Post for those not requiring certification, TJ's semisweet chocolate chips are vegan-friendly)
  • 3.5 Cups Confectioner’s Sugar
  • 1/2 Cup Cocoa Powder
  • 2 Tablespoons Dairy-Free Margarine (for soy-free people, I enjoy the Earth Balance Soy Free)
  • 1/2 Cup Regular Coconut Milk *DO NOT USE LIGHT Coconut Milk*
  • 1/2 Teaspoon Vanilla Extract
Yields 32 Small Squares

In a large bowl, combine the chocolate chips, sugar, and cocoa.  

Separately, place the margarine and coconut milk in a small saucepan, and stir together over medium heat.
Cook the mixture until the margarine has melted, and bubbles just begin to break at the surface.
Remove it from the stove, and immediately pour the liquid over the dry chocolate & sugar mixture.
Let everything sit for a couple of minutes (and if you wait too long and it hardens up on you, feel free to nuke it for 15 seconds at a time or until melty), and then stir vigorously to melt the chocolate and incorporate the dry ingredients. 
Continue stirring until a completely smooth mixture forms.
Mix in the vanilla, and quickly pour everything into your prepared pan, a lightly greased or cooking-sprayed 8x8 pan (or another similar size)

At this point, some people may choose to sprinkle flaked coconut (about 1 cup) evenly over the entire exposed surface.  Press the coconut gently into the fudge with the palm of your hand.

I wanted to kick my vegan fudge into the chocolate stratosphere so I used Chocolate Sprinkles rather than coconut
It's Raining Men  It's Raining Chocolate Sprinkles!
Press the coconut or sprinkles gently into the fudge with the palm of your hand or the back of a spoon.
Let cool completely before cutting into squares.  This required me to refrigerate it and then freeze it because I used light coconut milk.  Silly me.  Don't ever use light coconut milk in baking because it will not set up as well as full fat (regular) coconut milk.   But no worries....
....The Only Real Worry I had was hoping Skylar didn't dig into it when my back was turned!

The vegan fudge was just fine after I removed it from the freezer.
Then I cut it into squares
Totally delicious vegan fudge! 
It's rich, decadent, fudgy, wonderful.  Good vegan stuff.  And it's soy/nut/gluten free which is a bonus in my book.
You really only need a small square.  
 You may, however, help yourself to a large square!
Ahhh, good stuff!

Some Veggies I've Devoured in the past day, in addition to chocolate, of course:
Brussels, cukes, zukes, tomatoes, red, orange & yellow peppers
Dressed with my Holiday Orange Spice Vinaigrette Recipe & Black Pepper
 And Mixed Greens with Brock, Cukes, Brussels, Carrots, & Tomatoes
Dressed with a With a Fresh Batch of Vegan Slaw Dressing that I made yesterday
Dessert was No-Bake Vegan 3-Ingredient Flaxseed & Maple Cookies
 and Vegan Fudge!!!
Yoga Today is Sirsasana (headstand)
And Ardha Sirasana (Half Headstand).  Go into full headstand and then carefully lower so that your legs are parallel with the floorGot Milk Abs anyone?  Holding your legs 90 degrees from your body while fighting gravity is a sure-fire way to help increase your core strength.  Core strength is so important for everything from balance to remaining injury-free, and as a benefit, you'll whip your abs into great shape!

And please, when going up into headstand, DO NOT DONKEY KICK UP!   You need to go up slowly and with control; start in downward dog, make a crown for your head with your hands, and start to walk your toes forward, forward, til you go up, up, and away.  No kicking up into headstand as it's a sure-fire way to fall and get injured, severely.

#3 Avoid food products containing ingredients that no ordinary human would keep in the pantry.
#19 If it came from a plant, eat it; if it was made in a plant, don't.

My take on it all is that you don't have to be a vegan, you don't have to be raw, but you should be mindful and conscious about your food choices.  Know where you food comes from, what's in it, and be mindful about what you're putting in your body.  As I have said before, I don't always purchase Organic Foods and here's why, but if I can, I choose to purchase locally grown foods, which are likely organic, even if not certified organic.   I am mindful to try to eat seasonally, locally; and "mostly plants" as Pollan says.  Chocolate fudge not withstanding...haha!

I also don't think food choices don't need to be complicated and we shouldn't beat ourselves up if we eat something that others may shun or that someone else thinks is "bad" because it's your path, your body, your choices.    Really, who cares what they think! So what; you ate it, move on.  The beauty of food and our food choices is that in 3 hours, you can eat again and choose more wisely next time.   Keep it easy, relaxed, and mellow is what I try to do!

And on far lighter matters...Do You Like Fudge?  Or, what's your favorite format to get your chocolate fix in?  Chocolate cookies, chocolate cake, fudge?  Can there ever be too much chocolate?  I will say, I love white cake with chocolate frosting and I think I prefer regular chocolate chip cookies to double chocolate cookies, but really, chocolate in any form is good by me!  How bout you, What's your Fave Chocolate Food or Fave Way to Eat Chocolate?

This post on this day is perfect. This morning I bought goat's milk fudge on the internet(I definitely rememebr you encouraging this when I first bought it up). To top it all off, I just bought coconut milk at the store. AND I almost bought light coconut milk until I read the only difference was the addition of water. I can add water to things, too.

That fudge looks AMAZING! I only have light coconut milk, otherwise I'd be heading to my kitchen this moment to make it (so not into the Superbowl!)
I try to eat as ethically as possible, though I am not vegan. I am pescetarian. I am going to Borders tomorrow to get that book, can't wait!

I agree with you on The Kind Diet-- I liked it that it wasn't an "all or nothing" approach to veganism/raw food/healthy eating. I always like books (and people) that just encourage you to do what you can, even if it isn't everything.

I'm a big fan of Michael Pollan, but I think that the Omnivore's Dilemna was his strongest work. I kind of feel like he's just repeating himself and bringing nothing new to the table at this point...but hey, that's just me :-) To me, OD was the most well-researched, thorough, and original of all his (food-based) books.

Wow, the fudge looks incredible! And I somehow missed that you had a vegan brownie recipe! I was just asking CCV if she had one yesterday! You two are my surefire chocolate gals :)

I've read articles and saw a couple interviews from Michael Pollan (including the Oprah one). He seems to be pretty down to earth with his take on things. I like your points, too. Be conscious and make good choices, but you eat several times a day so let it go if you screw up!

i never even thought that the stores will be near empty now that the super bowl's on. i should have held off on grocery shopping this morning and waited until tonight. ah ha ha! your vegan fudge looks awesome - i looooove that ya topped it with chocolate sprinkles for extra mmmmmmmmm factor! thanks for the tip on using full fat coconut milk - i've yet to ever make fudge, i think i need to super soon! glad you've had a great weekend and i hope your sunday night is most stellar!

I'm so on board with you, though I don't always practice what I preach- if it doesn't look like food (puffed chips don't resemble anything close to corn!), then why are you eating it?!

LOVE Michael Pollen's books! I have the latest on reserve at the library. I just read The Kind Diet. I thought it was okay, but a bit light. I have read a lot on this topic though, so I think I wasn't the target audience!

What kind of margarine do you use that is soy free? I haven't found any.

I have two of his books sitting and calling to me, but no time to read them. He sounds pretty hard core, not sure I'd be able to follow his lead 100%. That means I'd never be able to have sprinkles again. Sorry, Michael, priorities priorities. :-)

My fave form of choc? I'd say anything with peanut butter. Choc. Chip cookies always rock the house.

My favorite way to eat chocolate is in oatmeal or pancakes. And wow on the headstand. I've almost killed myself trying that move.

Actually, I much prefer vanilla to chocolate, blondies to brownies, etc. - I do still looove some good vegan chocolate, and there's nothing like a chocolate-nut butter combo!
For that reason, I'd have to say my favorite chocolate vessel are chocolate peanut butter cups - but I have got to try your white chocolate version!

I adore Michael Pollan.. I also like how he uses the term "plant based" opposed to "vegan".. I kinda wish (or think) I should start doin that. My husband never says he is vegan.. just that he does not consume meat or dairy. Sometimes just that term sets people off..

I've decided the best way for me to live is to make the best choice most of the time, the better choice as often as possible, and TRY not to feel too guilty when I splurge a little - or a LOT.

And I've decided not to label my eating habits either. Just as I commented on Choosing Raw's latest post, just as sure as I label myself a vegan (even though I eat that way the majority of the time), then I'll have a HUGE craving for butter, an egg, or honey so I am a person who loves to eat healthy and splurge sometimes. Removing the label, for me, allows more room to enjoy my food and not stress over my choices/what folks will think.

And you're right - we can eat again a few hours later and make a different choice then.

My favorite way to eat chocolate? Hmmm... I think it's always better when nuts and caramel are involved somehow. ;-)

HI Averie. Warning all.....the malls and stores are very crowded! Everyone has gotten the same idea and I couldn't even find a parking spot even halfway across the parking lot. Superbowl for some. Miserable shopping day for others! It was so crowded someone ran into my cart and didn't even say a word. So, staying at home today would have been the wiser choice, LOL

Those are some great rules to follow by him. I love adding blueberries to cereal because they make the milk blue :) ...but no color changing cereals for me!

so not into the superbowl here! but my husband was nice enough to go to the grocery store for me before he got into the bowl. nice guy, huh?

I am very much drooling over your chocolate. I have had to megadose on chocolate today. When it calls to me strongly, it is very medicinal for me. :-)

My favorite way to eat chocolate? Well there's really no way NOT to eat it. I like some sweet and some salt with it. I suppose other than that as long as the other ingredients are raw I will be good. I am really digging chai with chocolate lately. As maybe you noticed on my last post.

Feeling a bit better today,yes, and the chocolate helps!

I didn't see Michael Pollan on Oprah but I have heard about it.
I'm pretty disgusted by the food industry with the mass production of animals, GMO fruit and veg, feeding animals corn and soy.. And they wonder why people get sick! Proper nutrition is the building block of life so I'm glad people like Michael are making a stand, especially in the US where these problems are much worse than in Australia.
If I COULD be vegan, I probably would, but my body wont take a bar of it! I need the high quality protein found in meat which I find much easier to digest than beans and legumes. Now I'm starting to crave beef actually, so what will be will be!

Not a football fan myself, but the grocery store was packed when I went earlier. I guess the trick is to go during the game, not before like I did!

i agree 100% with not over-complicating food choices. i believe that leads to disordered eating. i haven't actually read either books but hope to one day read them. as for chocolate- i actually do think there can be too much!! sometimes i just can't do fudge because it is sooo chocolatey! my favorite ice cream growing up was dairy queen's chocolate because it had a light chocoltae flavor... idk, guess i'm weird! haha

How about half coconut and half chocolate sprinkles? I am never one for moderation when it comes to something as decadent as this fudge. Better that pan o' fudge is sitting at your house than mine!

Pollan: Yes, he writes some good stuff. I read some of the "Omnivore's Dilemma" a while back, I need to crack it open again. Too short attention span these days. The new book I like 'cause it is short and to the point.

Chocolate: My day to day go to chocolate fix is my greek yogurt parfaits, my version of hot cocoa & my cocoa granita. To splurge on chocolate is a whole other story and the sky's the limit!

I really like your take on food. I think it's about making conscious choices, no matter what you decide is right for you. And it's so important to not beat yourself up for "being bad" when it comes to food. We do that way to much... I love your point that you get to make a better choice in just a few hours!

I saw Michael Pollan on Oprah and later that day in person. I really like his take on food, what's wrong with the food industry and the food we eat, and what we can do to make things better. I like that he is not "all or nothing" but encourages people to make better choices. I also like that he made a big point in his talk that people should cook/prepare their own food more and that making your own, healthy food does not have to be that expensive. He pointed out that there many affordable, healthy options. I think that's something we don't hear enough. Well, I could go on and on and on...

Oh, and I'm glad that taking the word verification off makes things a bit easier. :) I meant to do it the other day but totally forgot...

I love good quality dark chocolates, having just a piece of it at once, so it's a precious bite in the day. I definitely do not like fudge. Though I try to resist sweets (well, lately I didn't make a big trouble about it, but I was able to keep a balance), and I love many things, but when I decide to break the rule, I definitely will go for some chocolaty stuff. Cake, fondant or just that good quality dark one. But: it must be made of good quality ingredients!. Well, tending to vegan and as much as possible, raw style from one hand it's becoming more difficult if we go out, on the other hand at least I'm not as tempted as I used to be. Oh, I just tried a raw vegan recipe yesterday which I learned on a raw food course last Sunday, I am going to send it to You via e-mail, I think You will like it:)
The other thing is coffee for me, which I love, and if I get it right so do You. It's strange a bit, considering You are a yoga teacher, (maybe You remember I do yoga as well -try to take it serious and find my way in this direction), but I know -at least about myself-, that I will let this go as well once, and for now as You mentioned it as well-, it's no point to feel guilty about these things, just try to find the balance (it's all about this somehow), and let it go.
Have a great day over there! Hungary is already up, still a lot of snow, it's cold and grey, so pranayama, practicing yoga and a cup of coffee ( and a little piece of the home made raw vegan chocolate stuff) make the days go smoother and happier. Take care :))

Oh my god that fudge looks to die for!!! I can eat ANYTHING that has chocolate in it and truly believe that there's no bad chocolate dish (or I yet have to find one..). Not sure about the favourite way to eat chocolate.. I simply love it in all shapes and sizes ;). What's there not to love about chocolate?

I'm currently reading "In Defence of Food" but have only read a few pages so I can't say how I feel about it. However, I think it's great that he's making people aware of "real" foods.

(besides the fat content=) Is there a difference in the nutrients that you get? Is it just as healthy or less so because its thinned out? Just curious!

I try to eat as plant based as possible. Not that its hard because its what Im comfortable with. Ive always wanted to read those books my Pollan. I heard that they are wonderful! Ive been trying at my local library but its always checked out. Go figure=) I agree that you dont have to be raw or vegan but I do think you should eat as cleanly and healthfully as possible. I try to stick with the 80/20 rule. I dont think its realistic (or fun) to try and always eat to perfection. That way a little fun treat now and again is alright. You shouldnt be stressed out about how to eat! Just relax and eat what your body wants.

FUDGE! Yummamma! I love the stuff. Choco-coconut, choco-walnut and choco-pb are my favorite!

I made Ari a PB cup last night. First time he's ever enjoyed dark chocolate, so thanks!

I try to eat as ethically as possible and not put crap into my body. It's not always possible to eat like a saint, and I try not to beat myself up about it when that happens.

I love this. It is SO true! Sometimes I think we put more stress on our bodies by worrying about what we did or didn't eat than we would if we actually ate something totally crappy. It is so easy for me to forget that we just need to do the best we can and try to be mindful and compassionate to ourselves and all creatures.

Thanks for sharing Pollan's tips, I think he definitely has some great wisdom and ideas, even if I don't agree with him on everything. My favorite one that you shared is the eat plants not things that were made in plants tip. As for Alicia's book, I haven't read it, but what I've heard and seen so far tells me that it is one I would definitely like to get my hands on. Although some of her recipes rely a lot on processed stuff--which obviously isn't ideal--I think she gives a good intro to veganism for the mainstream by showing them that it DOESN'T entail a life of dietary deprivation.

Okay now on to more important things...chocolate! I like it but I am not a huge fan of super dark varieties or plain chocolate bars. I will eat them but it's just not my favorite. Fudge, cake, chocolate chip cookies, and ice cream that are chocolate are totally different stories, though. Them, I pretty much LOVE.

I haven't read Pollan's books yet. But, I did see the Oprah. It was good, pretty balanced.

Like you, I believe food choices should be responsible and that we need to relax a little about it. Life is not a pass/fail class. It's all about growing. =)

I'm a huge Michael Pollan fan and love "In Defense of Food". He hits the nail on the head and puts into words things we should've been doing for years. A lot of it is common sense.

On another note, and I actually left a similar comment on Mimi Kirk's facebook in response to a Whole Foods thing:
Be careful about farmer markets. Often enough, while they will sell stuff they've grown themselves, they'll also buy from wholesale distributors to supplement what they can't provide. I say this working in a situation where I see that happening and I have a hard time even going to farmer markets now because of it, especially if I know the farmer has been in the day before buying stuff from us.

Averie, we seem to have the same thought processes. "you should be mindful and conscious about your food choices. Know where you food comes from, what's in it, and be mindful about what you're putting in your body." YES! A simple idea that many don't grasp!!

Glad you liked the BodyCombat info. My fave class is BodyAttack. We have national trainers at my gym and they are phenomenal and motivating! :)

I think Sirsasana is one of the most empowering and beautiful poses. Every time I see a photograph of it posted, it makes me want to build a super strong core so I can master it someday!

Not a big fudge eater here, but I do adore chocolate - so long as it's milk. No white or dark for this girl! I also like traditional desserts - choc chip cookies are a classic; no need to fix what's not broken!

I haven't read any of Michael Pollan's books, but I'm really interested in his new one. The one thing that makes me "afraid" is that I finally feel like I'm reaching a good place of balance with food (not being scared to eat certain foods) and I am worried I'll get caught up in "good" foods "bad" foods again. I know he is an excellent author on the subject though.

Did you see the movie, "Food, Inc?" REALLY good and similar subject.

YES I LOVE FUDGE!! Heheheh...

My favorite: "The beauty of food and our food choices is that in 3 hours, you can eat again and choose more wisely next time. Keep it easy, relaxed, and mellow is what I try to do" Love this! If I accidently drink/eat/consume HFCS for instance.. I give myself a break based on this sentance.

I love what Michael Pollan says in his books, and I probably go with what he says the most out of everyone that is out there.

Surprisingly I don't like fudge very much because its too sugary/sweet. I prefer chocolate because its so dark, and unsweetened/less sweetened. Etc. But great recipe nonetheless!
