Happy Saint Patrick’s Day! A few weeks early, but who’s counting.

I couldn’t resist sharing these.
Now.

These brownies are the best thing to come out of my kitchen thus far in 2012.
I know we’re only two months into the year, but I assure you, these take the cake take the brownie.

Let’s talk about what’s going on in them. First there is an incredibly dense, rich, and fudgy brownie base layer. I adapted my own Fudgy Nutella Brownies, which are my favorite brownie recipe of all time, and I’ve sampled one or two brownies over the years. It’s the best-tasting (and easiest) brownie-from-scratch recipe I’ve ever tried because the resulting brownies are incredibly fudgy, dense, and not at all cakey or dry.
To the brownie batter for the base layer, I added a dozen crumbled Cool Mint Oreo Cookies (Layer 1)

I also made a green minty marshmallow mixture, comprised of Marshallow Fluff, peppermint extract, and green food coloring, and I swirled half of it through the brownie batter along with the crumbled Oreos.

To say this green mixture is “pretty good” is an understatement: white chocolate chips + buttercream frosting + Marshmallow Fluff + peppermint extract = Dive In and Don’t Come Up For Air.
I would like to have this stuff on hand for mental health days because a spoonful of it is guaranteed to put a smile on your face. Rich, sweet, decadent, minty, yet still fluffy.

While the brownies were baking I made the next layer (Layer 2):
melted white chocolate chips
made a batch of buttercream frosting
combined the white chocolate chips + buttercream frosting + the remaining half of the green minty marshmallow mixture
After spreading the Green Goddess over the cooled brownies and because there wasn’t enough going on already, I crumbled a dozen and a half more Cool Mint Oreos over the top (Layer 3)

This recipe below looks long because I gave instructions for how to make both brownies and frosting from scratch.
Use a boxed brownie mix and a can of frosting if that’s what it takes for you to make these.

Yes, there are a few stages and steps but it’s all worth it, I promise. Really you’re just making brownies, making a green minty marshmallow mixture, and crumbling Oreos everywhere. Not hard at all and no electric mixer is necessary.

Triple Layer Fudgy Mint Oreo Brownies
Makes 24 brownies
one 7-ounce jar Marshmallow Fluff
1/8 teaspoon mint extract*
8 drops+ green food coloring, or until desired shade of green is reached
1 batch of brownies – see ingredients below in step 2 (or use 1 box of brownie mix – make according to directions on the box by adding the water, oil, eggs)
12 Cool Mint Oreo Cookies + 18 Cool Mint Oreo Cookies (almost an entire 17-ounce package), hand-crumbled
3/4 cup white chocolate chips, melted
1 cup vanilla frosting – see ingredients below in step 4 (or use 1 cup storebought vanilla frosting; use the entire plastic container if you want a thicker final green layer)
Steps
1. Preheat oven to 350°F. Line a 9×13-inch pan with foil and spray it with cooking spray. In medium bowl, stir together marshmallow fluff, mint extract* (be very careful and do not use more than this unless you love mint; a little bit of mint goes a very long way), 4 drops of food coloring, or until light green is achieved (known now as ‘green minty marshmallow mixture’)
2. In a large bowl, prepare the brownie mix as directed on box, using water, oil, eggs, and fold in 12 hand-crumbled Oreos at the end.
or make brownies from scratch (based on my Fudgy Nutella Brownies):
4 ounces baking chocolate (I used 9 squares of TJ’s 72% chocolate bar or use 4 squares Baker’s Chocolate, semi-sweet)
3/4 cup butter or margarine, melted (1 1/2 sticks)
2 cups sugar
3 eggs
1 teaspoon vanilla extract
2 tablespoons espresso or brewed coffee, optional
1 cup all-purpose flour
12 Cool Mint Oreo Cookies, crumbled
Microwave chocolate and butter in large microwave-safe bowl for 90 seconds or until butter is melted. Stir until chocolate is completely melted. Stir in sugar (it will seem very granular, this is okay). Stir in eggs and vanilla. If adding espresso or coffee, add it now. Stir in flour until just combined, do not overmix. Hand-crumble Oreos over the bowl and fold them in.
3. Spread brownie batter in prepared pan. Drop about 1/2 cup of green minty marshmallow mixture onto brownie batter and reserve the remainder. Gently pull a table knife through the batter in S-shaped curves for a swirled design. Bake 23 to 25 minutes or until brownies are set, taking care not to overbake. (Some people’s ovens and taste preferences may require 25-30 minutes, bake until brownies are done and to your liking) Cool completely, about 1 hour, or put the pan into the freezer for 10 minutes if you’re rushed.
4. While brownies are cooling, make vanilla frosting by combining the following and beating until fluffy (or use 1 cup storebought vanilla frosting – or use entire can if you want a thicker final green layer) and set finished frosting aside.
1/2 cup butter or margarine, softened
3 to 4 cups powdered sugar
1 teaspoon vanilla extract
splash of milk, if necessary for consistency
5. In another small microwave-safe bowl, melt the white chocolate chips (microwave on high for 30 seconds; stir and microwave 30 seconds longer; stir until smooth, taking care not to scorch it as white chocolate scorches easily). Add the melted white chocolate chips and the vanilla frosting to the reserved green minty marshmallow mixture. Stir in 4 drops+ food coloring, or until light green color is reached, and spread over cooled brownies. Sprinkle with 18 hand-crumbled Oreo Cookies, slightly pressing them into the green mixture. Allow top layer to set fully before slicing and serving. I prefer these bars chilled and I store them in the refrigerator in an airtight container or store in the freezer for up to 3 months. Note: Use regular Oreos if you can’t find Mint Oreos and possibly add a touch more mint extract to the ‘green minty marshmallow mixture’ in Step 1 if desired.
I cannot convey to you how good these are:
The brownies themselves are so rich, and the mint Oreos crumbled in the batter add a crunchy minty surprise.
The green minty marshmallow mixture that is swirled throughout the brownie batter add a sweet soft surprise.
(I’m all about contrasting flavors and textures)
The top layer of green minty marshmallow mixture, with melted white chocolate chips, vanilla buttercream frosting, and more crumbled Oreos…
Heaven-sent. Or Saint Patrick sent.

PMS? Bad day? Child not cooperating? Husband not cooperating? Your dog ate your homework? Your favorite lip gloss has been discontinued? You typically don’t celebrate St. Patrick’s Day? You just got a parking ticket? Your boss is mean? Your best friend forgot your birthday? Your husband forgot your birthday?
Not a problem. Have one of these.

Mint Oreos, chocolate, and green food will cure whatever ails you. And by green food, I do mean one of these and not a kale salad.

Both Saint Patrick and I urge you to make these.

If you’re a fan of mint, you may enjoy these other desserts, all of which are also mint + chocolate combinations:
Girl Scout “Thin Mint”-Inspired Fudge (Raw, Vegan, GF)
Chocolate Peppermint Donut Holes (Raw, Vegan, GF)
Creme de Menthe Bars (No-Bake, Vegan, GF)
Peppermint Patties (Raw, Vegan, GF)
Mint Chocolate Coconut Snowballs (Raw, Vegan, GF)
Do you celebrate St. Patrick’s Day?
Not only are these brownies perfect for St. Paddy’s Day, but they would also be wonderful for Christmas and winter holiday parties.
They are going on my 2012 holiday baking list. It’s never too early to start thinking about holiday baking season, 8 months in advance.
Do you like mint-flavored foods?
I do, but a little mint goes a long way and once you add it, you cannot un-do it. I learned that the hard way when I once made creme de menthe bars that tasted like I was eating a bottle of Listerine, so easy does it when adding mint.
Happy St. Paddy’s Day!

um
yum
Holy hell. I have no words. Just…wow.
Mint and chocolate are meant to be together. I LOVE this recipe. I want to lick my computer screen. Who says mint anc chocolate should only be eaten during the holidays? My favorite candies are York Peppermint patties and Junior Mints. I remember getting more excited about the movie theater sized boxes of Junior Mints than the actual movie when I was a kid. That was, of course, before you could buy the “movie theater” boxes at the grocery store.
Girl…you HAVE to make these, at least put them on your 2012 baking list (so the family can help you eat them). They are your dream dessert. They blow away any creme de menthe bar or any other mint dessert I think I’ve ever had. You just have to try them b/c I know you’re a mint fan like me!
what a great green color (you know I love my green!).
I can almost taste these now – Mmmm.
Those are gorgeous! I love mint chocolate. Wish I could do green food dye, it’s off my list. Your pics look awesome. Keep stunnin’
Thanks for the photo compliments….my eyes were going to bug out of my head if I needed to look at any more green. Lol. To say I had one or two images, ahem, to sort thru is a little bit of an understatement
OMG, these look soooo good!!! Love mint, love brownie, love oreo, LOVE the combo! And they’re so pretty and festive too!! Definitely bookmarking these, and I hope to make them soon!!
The mint + chocolate combination is right on the heels of peanut butter + jelly or even coffee + chocolate! Match made in heaven =)
Wow, these look so amazing!
Love the green in these! They sound awesome. Betcha can’t eat just one!
They are so rich, so you should just eat one…but two is better!
Yummy, pretty, creative, rich, a little crunchy, a little chewy. WOW!! I think it’s time for me to get off my candy cane kick and go green. Chocolate and mint is so good any time of the year. Great post Averie!
Glad you likey!
I have to say these are MY favorite recipe of yours in a while! I love, love, love mint and chocolate! Looks amazing Averie! I am now craving a mint oreo blizzard at 7 am!!
Awesome photos too!
Thanks, sweetie!
xo
p.s. I was on your site yesterday trolling around b/c I am going to have Z make a few cosmetic tweaks to things for me
Haha, I can be such a fool sometimes – I read “Happy St. Patrick’s Day” and had to re-read it, what?! Silly Liz, it’s still February.
Ohh, these look so bad but SO good! That marshmallow filling, yum! I just picked up some Girl Scout cookies last night, some of which are Grasshoppers, so I’m dying to make a minty-green St. Patrick’s Day something!
Grasshoppers…did they change the name of Thin Mint to that? It’s been so long since I’ve actually bought G.S. cookies. I try to run for the hills b/c I can eat a tube of thin mints in a sitting!
LOL, no, I just obviously wrote that pre-coffee this morning
They’re still Thin Mints!!
Those just look insanely good. I can almost smell the mint. I didn’t even know Oreo had a mint flavored. There were some when I was a kid (want to say they were called crickets???) and I absolutely loved those. And Mint choc chip ice cream. I better go eat my oatmeal now!
there’s so many kinds of Oreos now, it’s crazy!
Grasshoppers!
These brownies look truly amazing, I love green food, I am sure these taste amazing!!
mmmm… my weakness. oreos.. yikes!
by the way, what is the secret to having more fudgy brownies? my brownie baking is gluten free and i used 1 zucchini for the egg.. but not sure how to give it a more fudgy texture. is it the butter?
These are almost to pretty to eat, almost
I love all things mint (especially your creme de menthe bars.) My older and younger brother were both born on St. Patrick’s day, so we make a pretty big deal about the day at our house. I think I will be making these brownies for the party!!! Great Pictures too!!
Please LMK if you do make them and what everyone says
Was pinning these beauties last night ~ YUM!!
Thanks for the pinning, my friend! xo
these look amazing. can’t wait to make them..such gorgeous pictures too!!
Please LMK if you do make them!
oh my word you’ve outdone yourself! You always think of the most extravagant and perfectly suited desserts for each holiday. I wonder if any of them will even survive until st. patricks day in your house!
I have been trying to keep on top of food holidays much better lately
Oh my goodness! These look utterly amazing! My husband (who is a huge fan of chocolate/mint) would go crazy over these!
OMG. I am going nuts over these. while i’m obviously obsessed with all your cookie recipes, this might be your best recipe yet!! i am DEFINITELY making these Averie!!
Please LMK if you do make them. THanks for the compliments and thanks for pinning so many things of mine…you are sooooo sweet!
oh. my. words.
I saw the first picture and was like “whaaaaaat? why did I just make myself plain oatmeal for breakfast without any sugary and fun ingredients??”.
I adore mint, brownies and anything fudgy and fluffy!
Ohhh my, these look absolutely incredible. I love mint chocolate oreos!
The photo made me drool when I saw it in my reader (and I immediately thought of St. Patricks Day!). The other chocolate mint recipes look great too- that’s my husband’s favorite flavor combination (although his favorite dessert is Breyer’s Mint Chocolate Chip ice cream).
On the non-dessert side, I’m a big fan of corned beef and cabbage. Oh, and Guinness too of course.
I didn’t even know cool mint oreos existed…where have I been?!
They have so many versions now, crazy!
You’ve come up with SO many creations this year so far that I just can’t wrap my head around because they’re too dang good! How in the world do you think of mashing all of the best ingredients together in the greatest way possible? These look excellent…I’ll be trying them soon!!!
I daydream about recipes and blending ingredients. It’s what I think about when I run and when I drive or am “zoning out”. It’s just how my brain works
I love mint and chocolate! The mint Oreos are genius. These are so beautifully green!
Wowza! These look like the perfect treat for St. Patrick’s Day!!!
These are too awesome. Definitely love mint/chocolate combination!
HOLY LORD WOMAN. These look awesome. I can’t eat 90% of what you post b/c I’m gluten free and too lazy to adapt the recipes … but thank goodness or I’d weigh 400 lbs. #noselfcontrol
PS You should probably come to the Blend retreat. And bake lots of stuff to share.
Blend Retreat? Will you be there? Ive heard great things about that one…
BTW your crochet/knitting..totally gorgeous. I’d buy your stuff!
What a great idea!! I know so many people who would appreciate and love these. I have to bake these for St Patty’s day
: ))
Jen
LMK if you do make them!
As if just looking at these brownies didn’t make me want to make them now, the comment about them making you feel better if you have a mean boss totally pulled me in!
We must be on a similar flavor wave length, I actually made a minty green smoothie for breakfast.
sorry about your boss! ugh!
Yessssssss. These look awesome. Simple as that.
Oh man that analysis shot with each layer labelled just kills me. Wowwwww who ever knew green could look appetizing? (Still the thing that freaks me out most on St Patrick’s Day is the green bagels I see in stores – they just look mouldy to me lol!)
My brain goes analytical when it comes to ingredients…glad you could appreciate the labels!
These look amazing, Averie!
you never fail to ignite my sweet tooth!
these look incredible! i’m a huge mint + chocolate lover!
A lot of your dessert recipes aren’t GF! Do you still eat them?!
Yes, I do. I’m not strictly GF. I was for about 5 years, but not anymore.
Mmmmm, looks great to me
Whereas I can’t get enough vanilla or cinnamon you are so right when you say a little mint goes a LONG way. I totally ruined a perfectly good smoothie by adding way too much peppermint extract once. I want a chocolate mint shake, not a mint, mint, MINT shake. lol
These have to be the coolest color ever. Perfect for St. Patty’s Day! I don’t really celebrate, but my husband has some Irish in him. And he loves anything sweet.
I think anyone who’s ever tried cooking with mint has one or two stories like that..I do!
Will have to make these on March 17th for my St. Patrick’s Day Bunco game that night!
Mama mia, look at that avalanche of mint and chocolate! These must have such a great mouthfeel
a great mouthfeel
= I use that expression and sometimes people look at my like I’m crazy, but texture is just as important as taste for me.
How did you know chocolate and mint is pretty much my favorite flavor combination ever?? These look so amazing, and just perfect for St Patty’s Day!
Mine too!
Dear Lord. Amazing! And so beautifully photographed. I need a group of 20 people I can bake these for.
I am not a big fan of a mint flavor, the only mint I like is in my tea and in some salads.
These look decadent and sexy a challenge for me would be to make them in a healthier version, there isn’t anything wrong with yours but I am pre-diabetic and have a weight problem. I’d like to make them with lots of substitutes and come up with a low sugar or now sugar, no margerine but some plant based fat. Coconut oil —— > bet I could make a no bake version of these w/raw-tella and coconut.
Dea.
You’ve inspired me so thank you!
These look glorious! Such a fun and festive treat for St. Patty’s day!!
Oh no you didnt’t?!?!?
That is some kinda crazy good stuff. Wow. Award winning even. I commend you.
Best recipe of 2012…just sayin’. Make these.
Averie, this is heavenly! I will try this asap…as in Now! I can’t let this recipe pass me by.
LMK if you make them!
Wow! Those look incredible, and I love the green colour. I definitely celebrate St. Patrick’s day!
Oh heck yeah! I was drinking tea while reading this post and spit it out when you said “and by green food, I do mean one of these. Not a kale salad.” Hilarious! These just look outstanding. We will def be making these in the Sparrow house. I just love your bar recipes. They are the best! Happy early St. Paddy’s day to you, too, Averie!
Just wondering about Step 4…is it 1 cup of butter or should it be 1/2 cup butter. You have it as “1/c cup” butter. Thanks, cannot WAIT to make these babies!!!
Those are beautiful!!!
I made a bunch of recipes with mint oreos around the holidays but never thought to save some for St. Patty’s Day. Great idea! Who doesn’t love mint and chocolate combined?!
I love this recipe. I hope you will stop by and link up to my St. Patty’s Day Project Parade.

After 25 minutes of baking, my brownies are still liquid on the toothpick…
i had to bake mine a tad longer than the recipe stated. I just kept a very close eye on them after 22 minutes. Mine took maybe 27. But they were perfect! Not the least bit overbaked!
It could be oven temp variance…as I emailed you, bake until done. For me, this is usually at about 24 minutes, but bake til done…could need up to 30 minutes but test with a toothpick and a little gooey is fine; it may not come out perfectly perfectly clean.
I made these last night for my daughter & husband and they loved them! I don’t care for chocolate, so these aren’t my thing, but they certainly are beautiful! I followed your recipe to the letter and made both your brownies & vanilla frosting. Thank you for such detailed directions!
My MIL is in the hospital and we visited her today and smuggled in one of these for her & my FIL, too. They thought this was much better than the green jello that was on her tray!
A definite make again from my family!!!
Thanks for the feebback, Paula! Glad your family loved them and glad you appreciated my detailed instructions. There are quite a few steps, but glad it was worth it…and yes, based on oven temps, times will vary (as well as just how “done” is done for various tastes preferences..I am a gooey brownie fan!)
I am going to attempt these for my St. Patrick’s day Bunco party!!! Just one question, maybe I missed it but what size of pan do you use to bake them in? 13×9? Thank you!
From step 1
“1. Preheat oven to 350°F. Line a 9×13-inch pan with foil and spray it with cooking spray. …”
So yes, you guessed correctly. LMK how they turn out! You’ll be the 5th person (that I know of) who will have made them if you do! I’d love to hear feedback! Bake until brownies seem done, that’s my only advice. Oven times and temps vary. For me, this is 24 mins, but for others, it’s 26-28. I am a gooey brownie girl though, too.
…
OH my goodness these look heavenly. For some reason I’m extremely excited for St. Patrick’s this year, and these are definitely going on my to-make list. Our dessert tastes are so similar that these must be insane!
Can you tell I’m wayyyyy behind on my Google reading, though?
No worries and yes, we have VERY similar dessert tastes. Chocolate, rich, sweet, mint; in general, we are super similar!
Um YUM!!!! I love mint chocolate anything!! Except, for the really overly sweet peppermint patties. But mint in any other form with chocolate is delicious! And those Vegan thin mint fudge balls look Delicious too! Now I have to go make something with chocolate and mint..
how did we miss this recipe?? we love anything with mint and chocolate…pinning
Thanks for the sweet words and the pin
your recipes are always my favorite!!! these are awesome!!
OMG! Where is the LIKE button. I think I just drooled on my keyboard!
I’ve been searching everywhere for the Mint Oreos. Where did you find them? Grocery? Target?
Regular Ralph’s grocery store. Or I know Target has them, but they’re very easy to find, at least around here in San Diego.
I have been eyeing this for about 4 days, after i saw this on pinterest. i was telling my boyfriend about it, and hes as excited as am! im going to try my culinary/pastry chef hand at these, and see what i come up with, and im going to make your nutella brownies when i make them (because my boyfriend likes nutella, too). i hope they turn out okay
So cute and perfectly seasonal. I’d love to have you join me at Seasonal Sundays.
- The Tablescaper
Thanks!
This recipe was an absolute hit! Made a batch to give as a gift at St Patty’s day, but ended up needing to make a 2nd batch because the first pan is gone! I did add a little more mint to the marshmallow mix, and to the “frosting” mixture) but overall this was perfect!
YAY! Thanks for the feebback!
I always write mint conservatively in my recipes b/c it’s one of those strong flavors that you can’t un-do and some people are super sensitive to it, plus potency/strength varies by brand. Anyway, glad to hear you had such a hit on your hands that you needed a 2nd batch. I love comments like this, you TOTALLY made my day
I made these today to take to my moms group tomorrow, and it’s a good thing I have a plan to share them, because they are so good I could eat them all myself! Well, not really, but I would want to.
I was cautious on the mint extract, but I think I would actually use a little more than 1/8 tsp next time. The mint flavor was just a little too mild for my taste; maybe I should have taken a taste of the frosting as I was mixing it. Oh, and my Target in WI doesn’t have mint oreos, but thankfully the grocery store did. Thanks for the recipe – it’s a keeper!
Thanks for the feedback! Glad they were a hit!
I always write mint conservatively in my recipes b/c it’s one of those strong flavors that you can’t un-do and some people are super sensitive to it, plus potency/strength varies by brand. I have had mint go from pleasant to Listerine in no time so was cautious
Anyway, glad to hear you sourced the mint Oreos, too!
These look delicious! Thanks for the idea…and the Sugar Rush!
Fantastic!!! Thank you so much for sharing. I added crushed mint Oreo cookies to the top, like it wasn’t already sinful enough
Yes I added crushed mint Oreos to the tops of mine, too! You can probably see that in the pictures there are Oreos all over them tops…mmm, good
This recipe looks so yummy, I will repost on my Blog! Thanks for sharing!
Averie! I am just finishing up making these! I’m so excited to bring them to work tomorrow! It’s TWO of my coworkers bdays on St. Patty’s Day, so I just HAD to make these when I saw them! I’m so excited to try them tomorrow! I struggled a little following the directions (I was on the phone with the MIL), but I still think they are going to turn out awesome! Thanks for the yummy recipe!
yes, this is not a talk on the phone recipe. LOL You have to pay attention because there are alot of steps and half of this, use the remainder of that, but it’s all worth it…and even if it’s a little flubbed with exactly what you did…no doubt, there is nothing bad that can happen with all that chocolate and mint and chocolate chips and oreos.
keep me posted how they like them!
hahaha Yes you are right on that one!!! Oh yea, can’t go wrong with all the sugar. I’m probably going to be up all night from licking my fingers (don’t tell my co-workers)!
Keep me posted how they go over!
will do!
Oh my word! These look life changing. It’s like a thin mint, brownie and oreo combined! I will have to go get some mint oreos and make these right away. And then go for a long run afterwards
I made these for my husband’s work potluck. Couldn’t find mint oreos so I used Grasshopper cookies instead. Absolutely fantastic dessert! I’m glad he took most of them with him, otherwise I would have never been able to keep out of them. They were wildly popular with his co-workers and he had several recipe requests. Bravo!
Thanks, Rebekah. Glad they were a hit! And yes, they are super rich and tempting; potlucks are a good thing, i.e. donate it & get it outta the house! Good to know about the Grasshopper cookies, too.
These are similar but far less steps and mixing this and that together, and very good, too. Not minty though.
http://www.loveveggiesandyoga.com/2012/03/oreo-cookie-stuffed-brownies-with-vanilla-buttercream-frosting.html
I couldn’t get the picture of your brownies out of my head for like a week, so I finally made them! I knew they’d be delicious and perfect for St. Patrick’s Day. I used mint extract as opposed to peppermint, and I’m wondering how different they are? I love love the cool mint Oreos, they’re the best part! And the green frosting layer is really good too. They’re very rich! I took a couple plates of the brownies to an auction at my church and they were sold for the scouting program.
thanks for the recipe and amazing pictures!
So glad you made and enjoyed them and sounds like you shared some and they were sold…awesome.
I’d say peppermint is a bit stronger, harsher, more “bitey” than mint, which tends to be a bit smoother. I’d liken it peppermint gum vs spearmint gum. I find peppermint is stronger. Not bad, just stronger. It also depends on the quality of extract used. Some extracts are going to be stronger than others, no matter what you use. Anyway…thanks for reading and making these!
I made just the brownie plus mint Oreo part of this recipe and it was a GIANT hit. Also, they loved the foil lined baking pan. Seriously, genius!!
So glad they were a hit! And yes, foil…totally saves on cleanup time and elbow grease. I never bake without it!
Oh so good and rich!! I agree they will be better when they are cold. I didn’t have enough time to let them chill before eating them.
So glad you made them! Just pop the whole thing into the freezer for 10 mins even…I love that chilled taste, with the mint, too. Mmmmm
